Lazy.. laid back Sunday... am so glad that what i had wanted to achieve fell into place.. started baking mac shells for my KL orders last Thursday.. managed to bake several lapis legit yesterday.. woke up early today to finish up one more lapis legit and tonight i will be preparing all the fillings for my macs.. tmrw is gonna be one long day as i hv to bake four more types of cakes and also pipe my mac fillings.. i hope i will hv the energy to bake something for my fellow kakis in Concorde.. am really looking forward to our 6 days in KL..


Yesterday was one of those days where i got agitated with just abt anything and everything under the sun.. probably i was just tired.. or maybe bec i still hv a little headache.. reason.. reason lol

In the mist of my busy schedule n mood swings.. i also managed to ice this cake.. it shud hv been a breezy one but with a supervisor aka my dear hb standing next to me with his arms behind his back and trying to pin point my mistakes.. i was like.. gesshhh.. maybe its just me but i dont appreciate being told like that.. i know it sounds bad and that he means well.. but I really dont like it?!.. honestly every single time i achieve something in baking - which i used to think was impossible - has my hubs name "engraved" on it.. hes the one that wud challenge me and gives me the motivation to bake.. he wud tell me the truth if he thinks my cake is not up to his expectations (the truth hurts sometimes) without him and his mouth.. i dont think i wud even wanna bake any celebration cake without any reason and this is one of em..


The last time i baked carrot cake was two years ago.. didnt think much abt it since i am not a big fan of it.. had my second serving of carrot cake while visiting hubs boss a year ago. he baked good carrot cake and ever since then i had mentioned to hubs to ask his boss for the recipe.. hubs kept on forgetting until today..

So here i am with another carrot cake recipe.. when i first saw this cake on Kitchen Trial.. i was smitten.. her carrot cake looks so so good and moist that i thought why not bake a carrot cake for the weekend.. baked it on Friday evening.. did the frosting yesterday night and today we had it for coffee when mom and dad came over..


I was right with my judgement when I first saw her carrot cake pics.. the cake turned out so soft and moist.. the walnut and the raisins added to the texture of this cake.. was just superb!! to me the cream cheese frosting was a tiny bit too sweet.. overall i really love the taste and the texture of this cake.. will definitely bake this cake again!

Ingredients
Cake
1 1/2 cups granulated sugar
1 1/2 cups oil
4 eggs
2 cups flour
2 tsp baking soda
2 tsp baking powder
2 tsp cinnamon
1/4 tsp salt
3 cups grated carrots, packed
3/4 cup walnuts (optional)
1/2 cup raisins - i added

Icing
16oz (454g) cream cheese - well softened
8 tbsp (¼ cup)(113g) butter, well softened
2 lb (900g) icing sugar
4 tsp vanilla

Instructions
Cake
Pre-heat the oven to 360ºF with a rack in the middle position. Liberally grease and flour a bundt or tube pan.

In a large bowl, beat together the sugar and oil. Beat in the eggs, one at a time.
In a second, medium bowl, whisk together the flour, baking powder, baking soda, cinnamon, and salt.

Add the flour mixture to the sugar mix and mix in with a wooden spoon until well incorporated.

Fold in the carrots and walnuts (if using).

Pour into prepared pan and bake for 45 to 60 minutes, until a toothpick inserted into the center comes out clean. Remove to a wire rack to cool completely before icing.

Icing
In a large bowl, beat together the cream cheese, butter, and vanilla until light and fluffy.
Gradually beat in the icing sugar until well blended.

Oh bugger.. am down.. yep the woman of this house is down.. yesterday i couldnt even keep my eyes open.. i was coughing non stop.. my chest was hurting.. my eyes watery.. my head was spinning and all i cud do was to lie in bed.. hubs had to take Sonia to school (tks babe!) and also fetched her home.. its gonna be the same routine again today and hopefully with ample rest i will get better.. well i better be bef tmrw!


Sonia came home fm school whining and crying.. she didnt get to play at the school playground and i hv no idea why.. her bad mood continued till she saw me holding on to my cold butter and just like that.. she started another episode of "wanting to bake cookies" .. I told her that i have to cook lunch for her abang and that I wasnt feeling well.. she started to gv me one hundred and one reason as to why she had to bake.. i finally gave in and told her that if she wanted to bake something.. it has to be muffins.. why muffins u ask? cos muffins can be done in a jiffy.. anyway all ends well.. her mood got better.. she got to bake and we finally managed to take our much needed afternoon nap..

Preheat oven 175C... place paper liner in muffin tray..

Mash bananas.. stir... pour sugar.. stir again

Crack an egg (she did it herself!).. stir again...

Pour melted butter and vanilla essence.. continue to stir...

Lastly add in sifted flour, baking soda, baking powder and salt.. mix it lightly.. do not overmix

Top batter with chocolate chips and sliced bananas

Done!... now its time to bake ur muffins

But first.. pose for mama hehe

Place muffin in oven - CAREFULLY.. bake it for 20 mins

While waiting for her muffins to bake.. she munched on peanut butter sandwich :op

1 1/2 cup all purpose flour
1 tsp baking soda

I know and I am sorry for not updating my blog for a week now... not been BW either.. i was on the go last week with a few macs orders and petite fours plus with no camera on hand.. i wasnt in my best mood to share any new recipes... its true what ppl say sometimes.. once an SLR will always be an SLR hahaha - sila muntah kahkahkah




As salam to everyone.. hope all are in good health.. i am down with a little cough .. think its gonna stay for a while.. every single night i will be coughing away .. thank goodness that isnt the case during the day..

We took Sonia to watch Disney on Ice last friday and guess what she asked after we told her that we were gonna take her there?.. "Mama do we hv to take airplane to Disney on Ice?" hahaha.. she had a blast of cos and kept on talking abt it.. she recognizes every single princess there is and was ecstatic when she saw her fav Ariel..



Our weekend was rather quiet.. decided to stay home on saturday.. got ourself a new helper to come by since Lisa seems to hv disappeared in thin air together with something else from my cupboard... sigh .. on Sunday we took Sonia to a new park and continued on to an indoor playground.. we later took mom and dad out for dinner..


So ok enough rambling.. lets get on to this super duper yummy cake recipe bef i finish up my cup of cuppa.. i hv only two words to describe this cake (the same two words all other bakers use for this cake).. MIND BLOWING!! yes u heard me right.. this yummy cake consist of chocolate cake with cream cheese peanut butter frosting and chocolate ganache to top it off.. u dont need a mixer for the cake recipe and its less "fattening" ahaks.. i didnt hv sour cream on hand and decided to sub it with a cup of double cream with 1 tbsp of lemon juice.. let it stand for 10 mins and voila.. u got urself sour cream wannabe hehe




I decided to follow her peanut butter frosting recipe to the T despite having reservation on the 5 cups of icing sugar .. which in the end was brilliant cos the frosting was just ohhh so so yummy and easy to handle.. i had wanted to leave it as it is cos it looks good on its own too..

After 2hrs in my fridge.. i took it out.. spread a nice dollop of ganache on top.. poured the rest in my piping bag and started to pipe 4 blobs vertically.. took my offset spatula and spread every blob to the right.. in one direction.. the only thing that u shud remember is that u hv to keep ur ganache in piping consistancy or u will be piping a runny blob.. clean ur spatula between every swipe and repeat the pattern until the whole cake is covered with "petals".



Ingredients
2 cups all-purpose flour
2 1/2 cups sugar
3/4 cup unsweetened cocoa powder, preferably Dutch process - valrhona
2 teaspoons baking soda
1 teaspoon salt
1 cup neutral vegetable oil - i used corn oil
1 cup sour cream (didnt hv so i used 1 cup double cream + 1 tbsp lemon)
1 1/2 cups water
2 tablespoons distilled white vinegar
1 teaspoon vanilla extract
2 eggs






Method
1. Preheat the oven to 175 degrees C and prepare three 8-inch cake pans with butter and parchment

2. Sift the flour, sugar, cocoa powder, baking soda, and salt into a large bowl and whisk to combine. Add the oil and sour cream and whisk to blend. Gradually beat in the water. Once the water is incorporated, add the vinegar and vanilla. Whisk in the eggs and continue to beat until well blended. Scrape down the sides and bottom of the bowl to make sure there are no flour bombs lurking in there. Divide the batter evenly among the 3 prepared cake pans.

3. Bake for 30 to 35 minutes, or until a cake tester or wooden toothpick inserted in the center comes out almost clean. I was able to fit all three on one rack in the middle of my oven. If you can’t, just put two on the bottom 1/3 and one on the top 1/3 and rotate about 20 minutes into baking… but be careful or they might fall! - i baked it in two 7" cake pans for abt 55mins..

4. Let cool in the pans for about 20 minutes. Invert onto wire racks, carefully peel off the paper liners, and let cool completely. The cakes are very soft – chill the cooled cakes in the freezer for 30 minutes (or overnight if you don’t want to do it all in one day) before continuing. - i chilled it overnight!

5. To frost the cake, place one layer, flat side up, on a cake stand or large serving plate. Spread 2/3 cups of the peanut butter frosting evenly over the top. Repeat with the next layer. Place the last layer on top and frost the top and sides of the cake with the remaining frosting.


Peanut Butter Frosting
Makes about 5 cups
Ingredients
10 ounces cream cheese, at room temperature - i used 250g
1 stick (4 ounces) unsalted butter, at room temperature
½ teaspoon vanilla extract
5 cups powdered sugar - sifted
2/3 cup smooth peanut butter - i used skippy reduced fat ha!!

Method
1. In a large bowl with an electric mixer, beat the cream cheese and butter until light and fluffy. Beat in vanilla. Gradually add the confectioners’ sugar 1 cup at a time, mixing thoroughly after each addition and scraping down the sides of the bowl often. Continue to beat on medium speed until light and fluffy, 3 to 4 minutes.

2. Add the peanut butter and beat until thoroughly blended. Taste it…. you know, for quality control




Chocolate-Peanut Butter Glaze
Makes about 1 1/2 cups
Ingredients
8 ounces semisweet chocolate, coarsely chopped
3 tablespoons smooth peanut butter
2 tablespoons light corn syrup
1/2 cup half-and-half

Method
1. In the top of a double boiler or in a bowl set over simmering water, combine the chocolate, peanut butter, and corn syrup. Cook, whisking often, until the chocolate is melted and the mixture is smooth.

2. Remove from the heat and whisk in the half-and-half, beating until smooth. Use while still warm.

Once the cake is fully frosted, it helps to chill it again and let it firm up. The cooler and more set the peanut butter frosting is, the better drip effect you’ll get from the Chocolate-Peanut Butter Glaze.)

To decorate with the Chocolate–Peanut Butter Glaze, put the cake plate on a large baking sheet to catch any drips. Simply pour the glaze over the top of the cake, and using an offset spatula, spread it evenly over the top just to the edges so that it runs down the sides of the cake in long drips. Refrigerate, uncovered, for at least 30 minutes to allow the glaze and frosting to set completely. Remove about 1 hour before serving.

I did not use her chocolate peanut butter glazing recipe but instead used my typical ganache recipe and piped petal effect all around my cake..

Ganache
250g dark cooking chocolate - i used valrhona 55% and cocoa berry 66%
250g double cream
30g butter

I wish i could update my blog on daily basis just like bef but its so difficult to do so now.. with Sonia in school and no more baking in the afternoon.. i sometimes wonder.. how long Bisousatoi will last.. am not saying that i wanna quit blogging.. i hv been a dessert blogger for almost 3yrs now and if I can juggle between my daily routine, baking and blogging .. that wud be awesome..

Happy Tuesday peeps.. hows the weekend.. hows the week so far?? kids out of school.. stay at home mom busy as a bee.. i am enjoying my time with my little princess.. am glad this week we get to chill in bed like bef.. watch telly.. have breakfast together.. have lunch together and when she takes a nap i get to bake.. thats how it used to be - nevertheless this is life.. once ur kid starts schooling.. u just hv to get used to the new routine..


I baked this lapis legit on Sunday evening.. earlier that day i baked pavlova and bec i need to stock up on my egg whites for my upcoming KL orders.. i thought why not bake layer cake.. Afterall, i hv not been baking layer cake for months.. baking layer cake is my all time fav.. dont ask me why tho.. not that i get to sit in the living room while its baking.. 5 mins on sofa and my alarm will go off.. so usually i will just sit in my dinning area with my lappy waiting for the bell to ring..


Anyway last weekend while we were in one of the malls.. i happened to buy a slice of coffee layer cake.. the portion was so so thin that u couldnt help but to wonder how many slices they get out of the whole cake.. i mean we are afterall talking abt S$1.60 per slice! I took a bite and all i cud do is to shake my head.. the coffee taste wasnt strong.. u cud tell what (lousy) grade of butter was used.. honestly it tasted more like sponge cake.. i guess when ur a baker.. ur expection is a little higher.. better off baking it urself even if it means u will have to crack 45 to 50 eggs ahaks..(and when you are a baker's husband....lets not go there... hehehe)


This super wonderful recipe was shared by Ayin.. shes one great baker and if u look at her layer cakes.. u will know what kinda layer cake u will get.. the texture of this cake is moist.. the sweetness is just right.. rich and ohh tastes so so yummeh.. i decided to sub chocolate to mocha simply bec we knew we would get our coffee layer cake fix by doing so.. go and get urself a a few blocks of butter (good butter!).. two big trays of eggs and start cracking.. I guarantee that u will love me for this hehe.. Ty Ayin for sharing!


Ingredients
45 egg yolks
400g caster sugar
900g butter - i used my last can of wisjman butter and scs butter (cold)
3 tbsp condensed milk
50g milk powder
50g flour - i used hongkong flour
chocolate paste - i didnt use
1 tbsp coffee extract/oil/essence - i added
1 tbsp Toffieco mocha paste - i added
1 tbsp Toffieco vanilla paste - i added

Method
Preheat oven 175C.. greased n layer with baking paper in ur 9" baking pan
Whisk butter with 200g of sugar.. once its fluffy.. add condensed milk and continue to whisk till pale in colour - put aside
In another bowl.. whisk egg yolk and 200g of sugar till fluffy.
Add butter mixture into egg mixture and mix till well combined
Add sifted milk powder and flour into ur batter
Divide batter into two part.. add coffee extract and mocha paste into one and to another part add vanilla paste
Weigh ur batter for each layer to achieve same thickness.. bake first layer using top and bottom heat.. bake the rest of the layer using grill mode - top heat..
Bake last layer for 10 mins using lower heat..
Once baked.. let it rest for 5 mins bef u take it out of ur pan.. let it rest till cool bef u slice it..


Ok folks.. i am not too sure if i will be able to take any pics of my bakes this week since I am returning Timo's camera this evening (yep its been more than a month.. dont know whats taking them so bloody long to settle our claim!!! grrr).. hubs is flying off to Jakarta early tmrw morning and i will be a little busy with my orders.. so take care all.. play nice and hv fun with ur kids!

I shud hv rested but typical me.. i usually end up whipping something for dessert.. last night I had wanted to bake a cake which i hv been eyeing for a week now but decided to forgo the idea since i had to bake for an order .. an order that i had almost missed until sis Nasyita smsed me right after subuh.. gulp.. anyway all ends well.. i managed to bake it and sent it over after Magrib..



So with what happened earlier.. i decided to try out this simple recipe.. Bolu sarang semut (ants nest) .. an old school cake.. a cake which hs for the longest time not been in my fav list to bake.. so why bake it when i know that i would not like it?? hehe honestly?? cos i trust her recipe.. knew i would be able to get myself to hv a bite and so i did... hubs liked it.. i am converted and next person on the list is my mom.. i will let her hv a taste and hope that she will like it as much as we did..



While in the oven.. the aroma of butter and caramel was so overwhelming that Sonia kept on running in and out of our kitchen.. i had to slice it while it was still warmish since hubs was eager to hv a bite!



Ingredients
Caramel Syrup
400g sugar
400ml hot water
5 pcs kaffier lime leaves - sliced thinly
2 pcs pandan leaves - sliced thinly
(both are optional..)

5 eggs
120g flour
150g condense milk
150g butter - melted
1 tbsp baking soda

Method:
- Heat sugar in skillet until browned (do not overcook or ur cake will taste bitter).. lower heat, add hot water. Allow to boil till sugar dissolves. Add kaffir lime leaves and pandan. Cook until fragrant. Remove and let cool. Strain and discard the leaves. Measure out 400 ml. Set aside.
- Preheat oven to 180'C. Prepare a bundt pan (diameter 22 cm), greased and sprinkle lightly with flour.
- Whisk the eggs until frothy and smooth. Stir in the flour little by little alternating with caramel syrup, stirring until blended and smooth.
- Add the sweetened condensed milk and stir well. Add melted butter. Stir well.
- Lastly add baking soda. Stir well. Pour batter immediately into bundt pan and bake in oven until cooked (about 45 minutes).
- Remove from pan, let cool and cut into pieces.

I am so sorry for not updating sooner... it was a super long day yesterday and by the time we got home i was almost gone.. we were out basically the whole day but had dinner at home (simply bec hubs wanted to eat the fish head curry that i'd cooked) and went straight to bed.. so for the first time in a long time.. we had a straight 9hrs of sleep!

First of all.. My big thank you to all the bday wishes in my email, smses, personal FB and also in my Bisousatoi page n FB.. shes one lucky girl! Sonia had a super wonderful time celebrating her bday in school and cant stop talking abt it.. hubs took a day off to spend the whole day with her.. we wanted to take her to USS right after school but the weather was scorching hot that we thought maybe its best to take her to the new indoor playground that hubs once told me.. sadly Sonia got scared when she went into the mini golf area.. the room was dark with dinosaurs here and there and since their indoor playground is all abt the Amazon.. Sonia didnt like it.. she later told us that she wanted go to another indoor playground and thats where we took her.. we spent a good 2hrs there.. took her to do some artsy things and also took her to do her nails.. overall she had an enjoyable day.. she kept on blaberring abt her day even after we put her to bed.. she fell asleep right after we gave her good night kisses.

To my dear princess "Ariel" Sonia (well thats what she wants to be known now).. mama and papa wish u a Happy Birthday.. ur such a joy to our life and we hope that u will grow into a beautiful girl inside and out.. Insyallah...
