Condensed Milk Layer Cake


I am pretty sure every baker wants to try out just abt any kinda cake especially if the cake looks pretty and ohhhh so so good.. i am a sucker for that.. be it when i'm in a bookstore browsing thru cookbooks or browsing thru food websites... the first thing i look at is the pic.. a cookbook without any pics is to me.. nothing.. i dont even wanna bother browsing thru it in the first place..


Nowadays with all the easy excess online.. i try not to buy any more cookbooks.. the book shelf in my basement is calling out for help (if u know what i mean).. so the easiest way to find new recipes is to find some time to sit down and blogwalk... hmmm do u ever wonder how it was like for our great great great grandmother if they wanna bake something new?? i bet they will keep on using the same recipe since thats the easiest.. shrug.. or browse through their "rock"-pad lol


Ok back to this cake... the first time i saw this cake was on this Russian food blogger's site... i was attracted to it and knew that its something that i shud try to bake.. judging by the look.. i knew straight away that the base of this cake is made of crepes.. showed hb the pic and told him that maybe i shud just buy the ready-made crepes.. he of cos challenged me to do fm scratch and so i did...


Prepared the base yesterday afternoon (tedious - i must add) and continued doing the cream when everyone else was fast asleep... chilled it in my fridge and sliced it today... had a spoonful and i was dissapointed... for some reason i knew for sure that this cake was not going to be rich since the base is not cakey type.. knew for sure that the cream was a little blahhh after tasting it... maybe this kinda cake is delish to others but to me who has never tasted anything like this bef felt the cake is too bland.. the base actually has a texture of .. ya know.. "wrap"? (wrap as in when ur making chicken wrap) when rolling the layers it felt as tho i was making roti prata lol


Overall it was a good experience eventho i was dissapointed with the taste.. we are sweet ppl so this kinda cake will never be our fav.. maybe if i add sugar to my whipping cream i might like it or even drizzle more dulche de leche on every layer..who knows..














Ingredients:
Cake
- 80 g butter, at room temperature
- 100 g sugar
- 2 eggs, at room temperature
- 300-350 ml milk - i used 300ml
- 1/2 tsp baking powder
- 800-900 g flour - i used 900g

Condensed Milk Cream
- 500 g boiled condensed milk - dulce de leche
- 700 ml whipped heavy cream
- 500 ml milk
- 4 tbsp starch - i used corn flour
- 2 eggs
- sugar optional - i should hv added sugar - blahhh

Method
For the layers of your cake
1. Beat the butter with sugar until light and fluffy.
2. Beat eggs, add to the butter mixture and beat until combined.
3. Pour the milk, stir well.
4. Add about 150 g of flour mixed with baking powder and beat until smooth. Slowly add the remaining flour to form a stiff dough. Don't worry about how much flour it ends up being, just keep adding until the dough is not sticky anymore. Cover with plastic wrap and set aside in a warm place for about 30 minutes.
5. Divide the dough into 20 equal portions... (i weigh .. each abt 75g) Lightly flour the surface and the rolling pin. Roll out the dough until it makes as thin as a crepe. Poke the dough with a fork to prevent bubbles from forming while baking. Bake at temperature 170-180 С for 4-5 minutes. Cut out equal circles from each baked “crepe”. Leave the cuttings for decoration.

For the Condensed Milk Cream
1. Beat the eggs with starch until combined. Put milk in a heavy-bottomed pot over medium heat. Add the eggs mixture into the warm milk. Low the heat and cook stirring constantly to prevent scorching for about 10 minutes or until thickened. Let it cool for a little bit.
2. Add the boiled condensed milk. Stir well. Cool. Add the whipped heavy cream and stir again.

Assembly
Each layer coat with the cream (about 4 tbsp). The top layer and the sides coat with the cream too. Decorate with the remains of the cake.

Cool at least 6-8 hours.



I am gonna go now.. theres no real cake for us to munch with coffee and am planning to bake something quick n simple.. cake with banana and chocolate.. yumms!

Rima, nampak lawa, tetapi memang la nampak tak sedap. Baik la lapis tu di isi dengan isi curry puff dan goreng selepas disalut telur, lagi la sedap.  Tak per la, buat perhiasasan blog u.

Memang lah when i first nampak macam love at first sight gitu.. auwww .. dah tu bila dah take pic semua ku duduk and konon wanna enjoy my cake TAPI huhu.. nasib lepas take pic baru rasa.. if rasa dulu baru take pic sure my pic pun jadi tak senonoh haha

If u do plan to bake this i wud suggest add sugar to ur cream and u will ace it but i must warn ya.. to roll every layer thinly is tiring.. 20 times of rolling.. 20 times of taking ur pan in and out of ur oven ahaks

Waaaaah, padahal cake ini sudah lama masuk di 'to do' listku  kak Rima. Tapi kalo rasanya tak secantik picturenya tak usahlah dibikin...hihi tak jadi saja. Untung juga aku belum bikin ya? Tapi kalau isinya ganache cokelat kira kira enak tak kak Rima??

Sorry to hear that.. mine turned out as in pic but the taste macam tak ngam dgn my taste.. i put up the recipe cos there is no harm in sharing.. terpulang lah if sesiapa nak mencuba.. i think my dad sure suka this cake cos setiap kali i gv cake sure dia cakap.. manis sikit ahaks

Sudah didalam kepala otak ku mahu buat semacam begini lagi.. maybe i will just buy ready made crepes (cos malas mau guling guling) and instead of milk cream .. i will use either nutella ganache or just chocolate ganache as fillings.. that way rasa nye sudah tentu enak..

Bake it ok.. i wanna buy ready made crepes and use nutella ganache.. while in barcalona i had that.. bukan macam kek lah.. but crepe with nutella .. sedap

Sayangnya that pretty little cake tak kena dgn ur taste buds :(  After all that layering and working overnight while everyone is asleep.  Slalunya kalau drizzle dgn choc ganache mesti laku kan.  Tapi kalau dah rasa mcm roti prata....terpaksalah cicah dgn gula hehehehez......

Rima,knur ada baked smthing similar a few months back.nanti knur mms the picture.just that the recipe calls for serbuk coklat in between layers.lupa sudah where I got the recipe from,maybe from one of the cookbooks.if you go to pavilion,kat dlm Times bookshop tu ada cakeshop,Huckleberry,ada jual cake yg mcm ni.very chocolaty and soft...yummms...

Maybe my cream.. Tak tahu lah.. I think I will do this again.. Macam tak puas hati ku.. Akan ku buat sampai I get the right sweetness ... nevertheless cake ni looks impressive.. Hubs working colleague also kata cantik the cake .. Mr T semalam kenyang after so long tak kena feed :(

Rasa dia macam wrap.. Bila ku roll ku wished I know how to tibar macam buat roti Prata.. Sure cepat habis.. Tak per.. I will do it again.. With extra sugar but kan I don't hv anymore dulche de leche.. Only bought 2 cans while in barca cos masa tu last day there n hubs dah warning our luggage dah over the limit.. One more thing.. Last night hubs try n he said something was a little off.. I suspected the cream.. Tu yg buat ku nak mencuba it again..

eh mencelah; nak cerita aje, banana cake yang kitchenguardian buat tu, yang atur banana kat bawah dan bila masak siram maple syrup tu; i dah buat, tapi i taruk walnut instead of badam...MasyaAllah sodap sangat-sangat...taraf kedudukan flavor dia tak setaraf dengan nama kek pisang; i guna organic maple syrup klas B; hubby kata yang sedapnya maple syrup, tak tau ler, tapi i rasa combinasi walnut, banana dua biji aje dalam adunan dan maple syrup yang sedap sangat. bagi tau ni takut la nak cuba kek yang sedap...

That one is like crepe kan.. this one texture dia lain .. tak macam crepe pun.. more to dough tu sebab harus diroll bef u bake it in the oven.. bila dah siap tu.. ruper dia akan akan "wrap"..
