One-Bowl Chocolate Cupcakes


I will start my writing by sharing this wonderful recipe.. original recipe is fm Martha Stewart... i saw it here and decided to gv it a go.. super easy.. fuss free.. great result and yep.. this recipe reminds me of the oreo cuppies which i baked a few months ago.. easy peasy and yummy!



Ingredients - (I got 50+ cuppies out of this recipe)
2 1/2 cups all purpose flour
1 1/4 cups dutch process cocoa powder - i used cocoa berry
2 1/2 cups sugar
2 1/2 tsp baking soda
1 1/4 tsp baking powder
1 1/4 tsp salt
2 large eggs plus 1 egg yolk - i used 4 eggs
1 1/4 milk - i used buttermilk
1/2 cup plus 2 tbsp vegetable oil - i used canola oil
1 1/4 cup warm water
1 tsp vanilla extract



Method
Preheat oven to 180C. Line 2 standard 12 cup muffin pans with paper liners.
Into the bowl of an electric mixer, sift together flour, cocoa, sugar, baking soda, baking powder and salt.
Attact bowl to mixer fitted with the paddle attachment, add the eggs, buttermilk, vanilla and warm water. Beat on low speed until smooth and combined abt 3 mins, scrape down the sides of the bowl as needed.

Divide batter evenly among the muffin cups, filling each abt 2/3 full. Bake, rotating pans halfway thru, until a cake tester inserted in the center of a cupcake come out clean, 20-25 mins. Transfer pans to a wire rack to cool slightly. Invert cupcakes onto the rack then reinvert and let them cool completely, top sides up. Frost cupcakes with buttercream, swirling to cover and garnish with chocolate curls. (I used chocolate ganache for my frosting - 250g double cream, 200g valrhona chocolate and 30g of butter)



Anyway yesterday mom told us that she felt like eating grilled stingray and had wanted to eat by the beach aka east coast but unfortunately when we got there.. the whole place was like a ghost town lol.. the "makan" place was closed due to cleaning so without wasting anymore time as it was already half past 8.. we decided to go to our usual seafood place.. we were the last to leave and since we know the owner.. we get to celebrate moms little bday party there.. it was a short one but i guess everyone enjoyed it..

Of cos I had to pack the cuppies individually for all to take home.. overall it was a good night.. ty mom for treating us to a seafood dinner.. the black pepper crab was delish!

I will be a little busy for the next few days.. i hv orders to fulfil and hopefully will be able to share new recipes this weekend! cheers!

Niat dihati nak letak 4 types of berries on each cuppies but unfortuntely kat supermarket tak jual strawberries yg kecik kecik dah tu si blackberries pun gedik gedik.. so terpaksa lah batal kan niat ku nak letak 4 types of berries but i think kan if tambah sebiji blueberry on each cuppies pun ok jugak..

I think u can never go wrong with berries ey.. plus u need to counter balance ur chocolate with something souries :op

Hehe those cuppies holders were not made especially for me.. u can get it fm sun lik or if ur in JB u can get it fm their bakery supply shop..

i was surprised that even after its been in the fridge for a night.. bila u keluar kan dari fridge.. the cake masih lembut and lembab.. memang sedap lah kek ni.. so easy and yet so soft and moist... u can bake it as cake sebuah also..

I need your advise on chic ganache. I tot of baking cuppies for my son 3rd birthday. This recipe you use those small cuppies isit?? And the chic ganache, if I make extra, can I keep them in the fridge and use them some other day??

Anyway, keep up your good work. Your cakes all look so Delish..

Baked this last night.
I want to check why are the top of my cupcakes sticky the next morning? When I tested the cupcakes for doneness, the stick was crumb free.

hmmm maybe u shud bake it a little longer... sometimes when u bake a moist type of chocolate cake.. that happens... did u store it in the fridge first bef u pipe anything on it?

Was looking forward to your advise.
I dd store it in a box before putting my ganache. Just in a tupperware and frost it the next morning.
Would storing in a fridge overnight help? How would it?
I usually put a coat of chocolate ganache and then some fondant flowers as decoration. The fondat will sweat righ if cupcakes were cold? Hpw can I solve this issue?

I recently bought Cocao Barry Mexique Origine 66%. And it had a sour taste. What % of choc is best for ganache. I use valhorna for the cupcakes.
Ganache was grainy and had a layer of oil on top. Did I over heat the creme??

Place ur cuppies in an airtight container and place it in ur fridge..

Fondant .. u cannot place it in ur fridge... just in an air condition room

I usually will use 55 and 64% type of chocolate for all my ganache

When ur chocolate is cold and ur cream is too hot.. it will curdle... next time dont throw it away... blend it and ur ganache is good to go
