Back on track...with Lemon Butter Cake

There are lots of stuff which i hv been missing.. the past few weeks hv been haywire.. i didnt get to update my blog daily .. didnt get to blogwalk as much as i wanted to... the travelling... the orders... hv kept me busy.. dont get me wrong.. i feel blessed but there is one thing that is missing... to be able to try out new recipes and having "me" time right after i bake something new... i miss it and bef it got out of hand just like before (i stopped taking orders a decade ago simply bec i got sick of doing the same thing over and over again) i decided to take a breather for a couple of weeks.. to get myself on track again.. dont want to get sick of baking and blogging abt the same thing ..

Honestly... you know what keeps me going eventho at times i feel guilty not updating my blog?? those that visit my blog religiously.. those that email and sms me and ask me how i'm doing when they dont see me updating my blog... All that keeps me doing what i like most.. baking.. taking photos... posting and updating my blog.. so today right after i was done doing my daily mundane routine.. i decided to try out this simple recipe.. a recipe which i had bookmarked many moons ago.. it was done within two hrs and bef i knew it.. i was sitting down with my lappy.. my cuppa and two slices of lemon cake.. updating my blog.. just like old times... ahhhh heaven...

We got home fm KL last Saturday.. the usual 2 1/2hrs drive back turned into a 6hrs drive simply bec the traffic was bad.. we planned to go to Malacca for a day on our way back to check out a new hotel there but decided not to do so after the bad traffic leading to Malacca.. got home to a messy kitchen and had no choice but to start scrubbing my tiles and kitchen cabinets.. haizz this is what happens when u let ur son take over ur kitchen lol.. Anyway long story short.. yesterday i managed to get things together.. did our groceries... did my laundry and hv yet to start doing what i hate most... ironing lol.. i finally bought my food processor after years of trying my best not to buy one ahakss..

So ok.. lets get on with this cake.. fab recipe is fm Sonia... ty ty ty... this is definately going to be another one like the "Sicilian orange cake" craze in my family.. same texture... same taste except it uses lemon and mohn.. wink wink

Ingredients
250g butter
200g sugar
2 lemon, finely grate the rind
4 large eggs
280g cake flour
2tsp of double action baking powder
4tbsp milk

Lemon glaze
8tbsp sugar
2 lemon, extract juice
2 lemon, finely grate the rind

Method
1. Sift cake flour and baking powder in a bowl.
2. Beat butter with the sugar until pale and fluffy.
3. Add in egg one at a time, then add in lemon rind, mixing well.
4. Fold in the flour and milk, combine well. Last add in poppy seeds, stir well. (i did the flour, milk, flour, milk, flour method)
5. Pour the mixture into cake tin.
6. Bake in pre-heated oven at 180C for 50mins.
7. While baking the cake, start to prepare the lemon glaze.
8. Mix sugar and lemon juice and cook over low heat till sugar dissolved, add in lemon rind, set aside.
9. When cake done, remove cake from the oven and prick all over with a skewer.
10. Pour over the lemon glaze over the hot cake.
11. Ideally to leave cake to set overnight, to get better flavour.

Lemon glaze is a must for this recipe yah as it enhances the taste and flavor of this lemon butter cake! gv it a try ok.. i promise u that u will get hooked to it heheh

Ohhh... Hehehe.. bef i go.. lets feast our eyes on these blue thang.. ty babe! didnt expect it coming nevertheless i just wanna say... i lap u as much as i lap anything that comes in a blue box hahaha

Hi Rima,

The horrible jam into spore was caused due to the finger printing thingy at the JB customs. It's sth new which they had just implemented and it's driving all of us, including me up the wall. I find that it's super duper inefficient and the best thing is, we do not know if they will make it permanent or just a trial run and later scrap it. Perhaps next time around, you can consider taking the second link. It's still jam there, but I feel that the jam in second link is much better than in Woodlands side. People drive ethically and there is less "rowdy" drivers there. Last Saturday I was travelling from SGP to JB around 9pm and around 9.30pm we cleared sgp checkpoint at tuas. As soon as out of sgp checkpoint, was rudely shocked to see the JB side was badly jammned and we cleared JB checkpoint only around 11.30pm. Nowadays a lot of singaporeans are travelling to msia over public holidays and school holidays, so better to avoid travelling during this time.
During the labour day PH, I got stuck at Melaka road. For a journey which takes just ard 2.5 hrs, it became double the time. sigh!

Lovely cake Rima. I am definitely going to try this evening after getting my lemons, but without the P seed. where did you buy the P seed from?

Just be careful with the P seed. Few years back, the authorities went to my friends house and made a check and spoke to her, cos she made a cake with P seed and posted it on her blog. She was given some verbal warning about it and they left.

Take Care Rima.

that blue box, will definitely make u smile weeks to come :D

ps : kat msia, time cuti sekolah, memang kena avoid travelling on nkve highway.

We were lucky it wasnt as bad getting into singapore.. the massive jam fm kl to senawang and fm senawang to malacca was terrible.. traffic were not moving and i was like.. geesshh..

The finger print thingy were told by us way bef we even drove back to sg.. its a one time thing and once u dah kena u wont kena anymore.. dont know if its gonna be a permenant thing or not.. when we got into singapore we saw massive jam fm singapore to drive into JB.. heard fm ppl that last saturday traffic was horrible on both tuas and woodlands..

Rima said...

Sally
P seeds?? where got?? thats not it.. hehe.. i dont go out and try to find it.. whenever i hv guest fm europe.. they will get it for me.. when i go to europe or australia supermarket.. i will get a packet for my family own consumption.. i know abt the other blogger who got sterned warning but i dont see any harm if we used it for our own consumption and not for distribution.. anyway u dont see any single seeds on this pic right?? hehehe

Rima said...

Selalunye memang dia tak pernah goreng goreng cos rumah ni jarang nak goreng goreng .. bukan cos of diet lol.. cos i memang jenis tak suka mengoreng pun.. usually if he cook something.. he will masak maggi lah.. he will reheat makanan yg i dah masak.. tu pun pakai microwave ajer.. tak tahu apasal last week he goreng gorent.. tu sebab ku ingat kan.. sure dia hv friends over tu sebab serak dia semacam ajer...

I think that day cos cuti umum kan.. tu sebab highway byk cars and also traffic that leads to malacca punya lah horrible..

Try and bake it ok.. must use lemon glaze baru steam hahaha

Yes Rima, I can just see the yummy lemon cake and nothing else. Btw, does this cake work if we used Plain or SR flour instead of cake flour?

Regards,
Sally

Rima said...

Sally
hehhe good girl! i think it will work with both.. not too sure abt the amt of double acting baking powder if ur using SR tho.. maybe use 1 tsp instead since it already has a rising agent in that flour?

Anonymous said...

Rima, ai nak tanya, total lemon used in this cake 4 or 2.

Melatie

"Kisses for you" kan kak? Kak, ku fikir akak lupa nak letak itu biji p***y dalam ur ingredient, rupanye sengaja eh. If u say the taste is as good as sicilian orange cake, then its a must try for me too. I've lots of the blue P seeds. Thanks for the recipe Rima.

Edi said...

i pun nak sgt beli food processor! belum beli2 lagi.. senang sikti nak buat carrot cake, hihi...

ya i can imagine how the lemon cake taste.. sebab ingredients dia sama lebih kurang mcm SOC tu kan. i've thought of doing it with lemon too tp belum sempat buat lg. and i want to try it with prunes jugak, jadikler prune cake. coz that SOC is so easy and yummy and failproof, mcm2 boleh buat tu!

Nuqman Harris Sharmizi said...
