Gong Xi Fa Cai!

Hey guys.. here i am again.. updating my blog.. last night i had a temporary breakdown and told hb that maybe i shud just stop blogging.. dont get me wrong yah.. its not cos of that stupid fb incident.. its just me going thru my mood swings.. probably also its the time of the month.. am tired fm all the CNY bakes.... my body is aching and i had a terrible headache yesterday.. not just that.. i dont think that i will ever get to properly rest since hb is going away for a week to Spain.. (i hate it when he has to travel!) yadda yadda yadda.. nevertheless i am back on my feet now.. no more date lines since i hv delivered all my bakes.. Alhamdullilah..



Sonia is still not fully recovered.. we took her to see Dr Kumar last Monday and went straight home after that since i had not even started baking my layer cake orders.. my SIL is no longer staying at our place ( shes now staying at my PIL's place since she has a friend in town.. this weekend they will be flying to KK to do mountain climbing and also diving)




Anywho other than that.. theres not much going on.. am back to my daily routine as of today.. cooking and baking for my family and today i decided on Tiramisu simply bec my mascarpone cheese expire yesterday.. welp! i know .. i know i shud just throw it away but if u guys hv a tub of 500g of mascarpone cheese wouldnt u be tempted to bake something out of it... hmmm




Ingredients
250g mascarpone cheese
300 ml whipped cream
100 gr powdered sugar
1/2 tsp vanilla extract

4 egg yolks
50g caster sugar

Coffee syrup
2 tablespoons instant coffee - i used espresso coffee
150 ml warm water
1 tbsp granulated sugar
150 ml Kahlua / rhum (if liked)
20 pcs lady finger sponge cake or chocolate 3 pieces of size 22x22x3cm

Topping
Whipped cream and cocoa powder to taste


Method
Whisk mascarphone, set aside.
Beat whipped cream and powdered sugar until thick and stiff. Set aside in refrigerator to prevent melting.
Beat the egg yolks, caster sugar, and vanilli until thick, then continue beating on top of boiling water (double boil) until the eggs warm (55C). Off fire.. Lift and continue beating until the eggs cool again. Turn off mixer.
Remove the whipped cream from the refrigerator. Add mascarpone into whipped cream mixture and whisk it using speed no 1.. pour the beaten egg yolks, stir till blended completely.

Combine sugar, water, coffee, and rhum (optional), stir well, set aside.

Assembling
Prepare a baking pan or glass casserole dish.. arrange lady fingers on the base.. drizzle with coffee liquid until moist. Pour mascarpone mixture, smooth the top.
Arrange lady fingers again, drizzle coffee liquid.. pour mascarpone mixture again.. if ur casserole dish is taller u can also do a three layer tiramisu..
Place in fridge to let it set.. decorated top with whipped cream and sifted cocoa powder.



A good ole Tiramisu in a tub hehehe.. i doubled this recipe since i had 500g of mascarpone .. This one is for u SIL.. enjoy!!

I would make one also if I have that much of mascarpone cheese in the fridge. It's expensive and sayang nak buang. By the way it's only one day gap. Have a speedy recovery to you and Sonia.

the moment i saw those tiramisu, i terus teringat kat my mascarpone in my fridge. hhmm i wonder if it has expired...

at my hb's regional office (in SG la kan...heheh mana lagi), there's this mat salleh guy from UK who loves to sing ...drum roll....lagu broery you...title Widuri...his voice is soooooo nice & merdu & lunak. akan tetapi, tak reti cakap melayu or indonesian. aiseh, potong stim betul.

Tiramisu tu kategori dahsyat! BTW tssk.. I have a tub of 250gm mascarpone intact. Expired in 2007, boleh gitu?? Huwaaa.. nak nangishhh.

Tiramisu memang my fave dessert n my go to dessert kalau ada tetamu. What brand of mascarpone did you use in Sg?

Ty Nin for ur doas and yes.. bila i check and looked at the expiry date.. biji mata macam nak terbeliak.. benda tu bukan nye murah.. typical me i always beli cos i like it when i hv the things there for me to use it whenever a recipe calls for it.. tu sebab i go ahead aje and use it and tiramisu is the best option of cos since hb is a big fan of it..

Eh the other day my hb showed me this guy on you tube.. he loves to sing all the malay songs but tak tahu sepatah haram pun makna nye nor he can speaks bahasa.. memang betul potong stim aje...

Muahaha cik som.. expire 2007?? dah jadi yogurt kot ahaksss.. benda dalam fridge ni kita selalu macam terlupa tau.. sayang cos benda ni bukan nye murah.. ni i am trying to finish up all my whip and double cream.. tak suka simpan belen belen cos sure akan terlupa pasal benda ni..

Tak jadi go zoo pun.. it has been raining non stop these couple of days.. hari ni boleh panas pulak.. kasi chance orang gong xi gong xi lah..

Hi rima...I suggest you get maid to do your order. You jadi towkay. Jadi you tak stress. Dont stop blogging plssss!! I have a fren who works in a canteen. Part time she take order for cakes & kueh talam. Every morning the maid buat kueh talam to send to shops. She said the maid salary easily covered by the kueh talam. Belum lagi cakes & cookies.

Honestly i am not going to do this as in taking orders permenantly.. when i feel like it i will say yes.. when i feel malas i will say no.. plus having a maid is like having another child in our household.. nanti if i travel.. siapa pulak nak jaga budak tuuu hehe

Aniwae I tak tergamak n tak termurah hati sangat nak give away all the kek lapis...so I keep 1 flavor each for myself....hari nie mcm I yg celebrate CNY!! Sehari suntukl mengunyah kek lapis...conferm naik badan berkilo - kilo!!!!!

Kadang bila mood tu macam tak tentu hara.. rasa macam nak give up aje.. but my hb always encourage me to keep on blogging.. he said u better not stop or u will ended up feeling bosan at home all day long.. hmmm

both also liquor.. i tak sub to anything pong.. if u nak u can use rum essence w/o liquor type.. just a few drops will do.. dont over do it or else it will overpower the taste and smell of ur tiramisu
