I had intended to post an entry late last night but was simply impossible.. my little Sonia is feverish and to see her all quiet is a little disheartening.. me and my big mouth.. always telling others that my little one is a chatterbox.. :o(


Sooo my sis in law landed safely early yesterday.. Sonia was super excited and as soon as she saw her bibik she quickly ran and gave her a big big hug.. she must hv missed her bibik alot! tmrw if Sonia is a little better.. we plan to take her to the zoo.. will see...



Anyway after we got home and while everyone was taking a nap.. i decided to prepare a simple cheesecake.. the plan was to have it today but 3hrs after i placed it in my fridge.. Timo (hb's work colleague) came over.. so i quickly took it out.. sliced em and served it to him.. am so so glad that at least the cheese mixture had set and we are able to indulged in this super delicious.. ice cream like.. super soft in texture and super rich strawberry cheesecake... ahhhh need i describe more how this heavenly cake tastes like?? hehehhe.. recipe fm here

Ingredients
125g of cream crackers - i used digestive biscuit
1 tbsp powdered sugar - sifted
80g unsalted butter - melted.

375g cream cheese
125g powdered sugar (sifted)
250g whipcream - whipped till stiff peak
3 tbsp limon juice - i used 2 tbsp
1 tbsp powdered gelatin
50 ml water

3 tbsp strawberry jam - i used 6 tbsp
1 tbsp hot water - i used 2 tbsp
fresh strawberries


Method
In a food processor, bliz cream crackers until smooth
Mix the biscuits, powdered sugar and melted butter, mix well.
Pour into a baking pan, flatten and compact with the back of ur spoon or use cake lapis presser
Place in refrigerator for an hour.

Microwave gelatin & water on high .. stir and set aside.
Beat cream cheese and sugar until soft, add lemon juice, mix it again until blended.
Pour 1/3 whipped cream into cream cheese batter and stir well.
Pour back cream cheese mixture into whipped cream mixture and stir well.
Enter the solution of gelatin, stirring until blended.
Pour the batter into an 18cm pan, flatten it and keep it in refrigerator overnight.

Mix strawberry jam with hot water, stir and let cool.
Pour into chilled cheese cake, flatten add fresh strawberries.


This is how my cheesecake looked like after only 3hrs in my fridge.. still not fully fully set but the taste.. uh la la.. we had a slice each as we were abt to go off to my uncle's place for rewang makan hehehe .. oh i will upload my cousin's wedding pics in my next entry and bef i do that just wanna update u guys on the episode with the picture thief..

I was really surprised that when it comes to these type of things, even big organizations can be very effective.

The same morning I received the reply from FB, "Amirah" also replied, apologized and mentioned that it was not her intention to "steal" as she is not good in taking pictures and picked pictures randomly from the net. In a second email she again apologizes and asks to have the FB image removed from my blog.

So, Amirah, here is my response:
1) Apology accepted, but not your reasoning.
2) You seem to be smart enough to crop out my watermark on the picture so I do not see why you should plagiarize other people's images. If you take something which belongs to someone else without their permission it is called stealing - as simple as that. Also, your pictures are not really "random" - almost all were from my blog (including your profile picture).
3) I will not take it any further.. just want this to be a lesson for everyone..and Amirah, because of that I will not remove the FB image.

This episode should go out to anybody out there who think it is correct to copy and paste without acknowledging the source. Even I copy recipes from other places, but it is always accompanied with a reference.

Its finally OVERRRRRR... i managed to bake every single cookie there was to bake by Wednesday night.. u dont know how emo i got when i put the last piece of it in the container muahahha... tears in my eyes.. tears of aduhhhhhh penat bangat!!! hahahaha

Honestly.. it wasnt too bad.. its just that i hv not taken any big orders for the past 10 yrs and of cos when out of the blue i decided to start taking in big orders my body simply went kaput.. anyway now that the cookie marathon is over.. i am looking forward to bake cake lapis... :o)

So ok whats new with me.. err well hb was in Vietnam for a day on Thursday which meant i got the car for the day.. went out to "go go bambini" with Sonia first thing in the morning.. met sis Lyn in the afternoon (she took half day leave for me.. awwww).. had lunch.. went to the florist (yikes too crowded.. i couldnt even find any parking!).. met sis Wati for afternoon tea aka coffee of cos.. took both of them home and by the time i got home it was almost 9pm.. We had fun of cos.. all my tiredness and stress gone within one day lol

Today went by so so quickly.. i did what i was supposed to do in the morning.. got all things ready and right after friday prayer hb took us out for a quick detour to Sun Lik bef picking Sue and family for coffee and Indian dinner.. Finally auntie got to meet little Maddie! shes as cute as a button.. her smile.. her big round eyes.. ohhhh that half mat salleh girl is going to grow up to be a mighty fine woman heheh.. heres a few pics of today..

This is gonna be a quick entry.. i hv to start baking my cookies soon or i will never get it done by thursday.. friday i am planning to do a little bit of spring cleaning in the morning and will probably meet up with Sue and family for dinner.. cant wait to see that woman again and Maddie.. ohhhhh auntie will hug u like there is no tmrw hahahha..



Saturday morning my sis in law will be flying in fm Austria and will be staying with us for a couple of days and that shud keep us busy.. we hv so many plans that we dont even know where to start lol.. err not forgetting this weekend my cousin is getting married.. will definitely take loads of pics and hopefully.. insyallah.. i will start to bake my layer cake orders fm monday onwards... busy busy busy till CNY.. cant wait for the long hols next week!



Ekkkk my so called quick entry has becoming into a 3 short para lol.. i loveeeee loveeee this cake so so much... I heart deep deep and i am pretty sure mom will heart this cake too when i gv it to her later in the evening.. bake it ladies and u will definitely heart me for this hehehe





Ingredients
200g margarine - i didnt use
100g butter - i used 300g butter
300g powdered sugar - i used 280g caster sugar
1 tsp vanilla powder
5 eggs
300g flour
1/2 tsp Baking Powder
1/4 teaspoon baking soda
2 tbsp cocoa powder dissolved in 2 tablespoons hot water - i used valrhona
1 tsp black forest paste - i added (u can always use chocolate paste wokey)

Method
Preheat the oven... ( I preheat oven at 170C)
Prepare and greased a 20x20 baking pan or 2 loaf or oval baking dish - i used a 6" round pan and a loaf pan..
Sift together, flour, baking powder and baking soda, set aside.
Dissolve cocoa powder with hot water, set aside.
Beat margarine, butter, vanilla and sugar until smooth.
Lower mixer speed to level 1.. add eggs one at a time while continuing to whisk
Add in the sifted flour and stir well.
Take half of the batter and mix with cocoa mixture.
Pour white batter alternately with chocolate batter until both batter runs out.
Create a marble motif with a toothpick - i used chopstick
Then bake until done. Remove the cake from pan when it is cold.


Note: This cake taste better the next morning.. so if u intend to serve it the next day.. i wud advise u to bake it the night bef..



Hehehe just to let u girls see what these monster did to my diet kahkahkah... i hv not cooked this for the longest time and i ate like 4 plates of rice yesterday... so sedap and spicy! recipe u can get it fm here.. cheers!

Well helloooo peeps.. did anyone miss me?? hehhe.. I know for sure that i miss blog hopping.. the weekend was crazy.. i was like everywhere lol.. i know for sure that all this wont last long .. soon my daily routine will be back to normal and hopefully by then i dont get that "are u ok Rima.. u look tired" phrase anymore hahahha

Soooo in my last entry, i had "no choice" but to ask my permanent guest blogger to step in.. i was really really kaput.. all i cud do was to load the pics and while doing so i think i must hv fallen asleep like a zillion times! .. i remembered clearly though that i had asked George Clooney eh no my hb to finish up updating my blog... so ty George Clooney for being there in my dreams making coffee and errr err ahaksss and yeah.. not forgetting ty to hb too :op

Anyway .. yesterday was sis Wati's bday.. i knew i wanted to call everyone to our place but wasnt too sure if i was up to it? well after one sms to another with both my sisters.. i decided to go ahead with my plan and do our typical Korean bbq dinner.. went to Tekka Market.. bought our wet stuff fm there and went straight home.. i quickly prepared and marinated the seafood and meat stuff.. whipped up some quick dessert (no dinner would be complete without dessert ey) and voila.. by 5pm i was whipping up my sis last minute bday cake.. shes not into creamy cakes.. not into coffee and doesnt want anything with cream cheese.. so the best option was to bake her chiffon cake.. (I will update the chiffon cake recipe in my next entry ok).. it was done quickly and i know she will definitely loved it! Happy birthday sis Wati! may this year be ur best ever and hope all ur wishes will come thru.. stay young and healthy always..


They are huge!,, i bought 3kg of the medium ones, pealed every single one of em and marinated it and i bought one kg of these babies of which i managed to pinch like 10pcs for me to turn it into prawn lemak cili padi today hehe

Typical scenerio during dinner.. we hv two areas.. adult and kids area.. sis Lyn came with a box of nyonya kuih.. Sis Wati came after a day out by the beach.. Hairi came home with his "friend".. hmmm.. and mom and dad came right on time bef we started grilling all our foodies..

Some of the desserts that i prepared earlier.. the one at the bottom right was the quickest to prepare.. i took my left over chocolate cake.. placed it in my food processor.. poured it into individual small bowls.. poured my leftover cream cheese mixture and ganache .. placed a strawberry on top and let it set for an hr or so.. yummehhh

I prepared creme brulee even bef i started marinating all the foodies.. baked it and let it set in my fridge and while doing that i whipped up my berry callebaut mousse mixture and piped it into individual glasses.. next i took out my leftover choux pastry fm yesterday.. whipped up chocolate mousse and piped it in.. within 2hrs i managed to prepare a full set of dessert for my family .. well this is what u call rezki.. thank goodness I hv a pantry that looks like a bakery supply shop lol or else...

Sis Wati and her simple cake.. next year u will get ur Rosyam Nor cake wokey hahaha

As promised.. this recipe is the same as the orange chiffon cake recipe that i had baked bef.. the only diff was i sub orange juice to coconut milk and orange zest to pandan paste and a few drops of green colouring..

Ingredients
4 Yolks
80g Castor sugar
80ml Corn Oil- i used canola oil
160g Cake flour
1/4tsp salt
160ml coconut milk
1 tbsp pandan paste
a few drops of green colouring

7 whites
60g Castor sugar

Method
1. Preheat oven 175deg.
2. Yolks + sugar, whisk till sugar dissolved..
3. Add Corn oil + coconut milk, pandan paste, colouring and salt, stir till combine
4. Sieve in Cake flour, stir till combine.
5. Beat whites, add sugar in 3 addition till just before stiff peak.
6. Fold 1/3 whites into yolk mixture gently.
7. Fold remainder whites.
8. Pour into 20cm chiffon tin - I used 21cm
9. Baking time abt 50mins

I, Mr Rima, her permanent guest blogger, have been left with the task of finishing this blog entry after she loaded all of todays pics.. where is she you might ask? Right now my wife is in lala land dreaming about George Clooney in an apron (and nothing else) making her a cup of Nespresso.. Today we were invited to my ex schoolmate Sandra's farewell party. She and her husband Stefan together with their two sons will be moving to London next week. They have been here for just over three years and it was time to move on to the next posting. It was a nice day to catch up with many old faces (we all attended school here)...

Anway, Sandra & Co., we wish you all the best; send our regards to The Queen, and for sure we will see you back in Singapore very soon!

I am tired and I am feeling shitty today.. oh well.. we hv our days.. somedays are good.. somedays are bad.. thats life ey.. u cannot run away fm it.. :o(




See the pic abv?? well i hv been busy baking snow princess since yesterday.. i've only done 400 odd pcs.. alot more to go lol.. i hope i will get it all done bef chinese new year! gulp



Anyway today i took a breather and baked these beauties after baking two batches of snow princess... after a while of baking the same stuff .. i got really bored so since i had like a few bananas in my fridge.. i thought why not give Anie's recipe a try.. well yep.. u were right Anie.. the texture is super soft.. almost like a cross between sponge and chiffon cake.. I like it alot.. even mom said its delish.. so ty for sharing this wonderful recipe and err no comment fm hb since hes in Vietnam again! blahhhhh





Ingredients
1/2 cup butter - 113g
1 cup sugar
1 egg
1 tsp vanilla extract
1 1/2 cups mashed banana (about 3 medium bananas)
1 1/2 cups flour
1 tsp baking powder
1 tsp baking soda
1/2 tsp salt - I used 1 tsp since i used unsalted butter
1/4 cup baking cocoa - barry callebaut
1 cup chocolate chips - i used both white and chocolate chips


Method
1. In mixing bowl, cream butter and sugar. Add egg, vanilla, and bananas, beating thoroughly.
2. In a separate bowl, combine flour, soda, baking powder, and salt. Add to creamed mixture and mix well.
3. Divide batter in half. Add the cocoa to one portion of the batter. Spread that portion in the bottom of a greased 9 x 13-inch (I used 9x9) baking dish. Spoon remaining batter on top, swirling gently with butter knife if desired, and sprinkle with chocolate chips.
4. Bake at 170C for 30 minutes or until batter tests done with a toothpick or fork. Cool and cut into 24 squares




Oh bef i go.. i thought id share a little news.. my little Sonia is toilet trained.. i didnt wanna train her at younger age cos i knew it wud be easier if i did it when shes almost 3.. so all is good cos it only took me 2 days to train her and guess what is her common phrase right now.. "I want to kenching" hahahahha

First and foremost bef i forgot.. Happy bday dad!! this is not his bday cake lol.. its not healthy for him but definately good for others hehehe

Anyway back to where i started.. I finally put aside all the negative feedbacks fm others and decided i shud gv this recipe a try... yes i am actually talking abt the Red Velvet Cake.. my one and only RVC heheheh



Last night when i served this to hb he was like.. oh wow.. "this is super fantastica delicious! i told ya that u shud just go ahead and try to bake us this cake".. well he was right.. no harm trying.. am 42 and still had no idea how this cake tasted like until last night.. i shud hv baked this long time ago.. or shud hv just gone ahead and buy a slice of this cake when i was in the US many years ago.. the red colour is a little intimidating but the flavour.. woot woot! the crumbs are tight and the texture of this cake is simply awesome.. super moist and oh did i tell ya that the cream cheese frosting is to die for .. lol forget abt ur diet for a day and u will thank me for persuading u to bake this cake! hehe.. I on the other hand.. am thankful to hersite for sharing this wonderful recipe..

Ingredients
1 1/4 cup sifted flour
1/2 tsp baking powder
1/2 tsp salt
1 tbsp cocoa powder - i used berry callebaut
1 tbsp red colouring - I used 1 1/2 tsp wilton red paste(no taste)
1/4 cup soft unsalted butter - 57g
3/4 cup sugar
1 egg
1/2 tsp vanilla extract
1/2 cup buttermilk - I used 1/2 cup whole milk plus 1/2 tbsp vinegar/lemon
1/2 tsp vinegar - i used heinz distilled white vinegar 5%
1/2 tsp baking soda

Cream cheese frosting
125g cream cheese
50g unsalted butter
110g powdered sugar - i reduced it to 80g
1 cup fresh cream, whipped until stiff - i used double cream




Method
1. Preheat oven to 175 degrees Celsius.
2. In one container, sieve flour, baking powder and salt. Set aside.
3. In a small container, combine cocoa powder and red coloring and stir well until form a paste (I added a little water).
3. Using a stand mixer, beat butter with sugar until light and fluffy. Add the egg, beat until blended. Add the vanilla extract and cocoa powder mixture, beat until well blended.
4. Add in sifted flour and buttermilk alternately. Beginning and ending with flour. (F-M-F-M-F)
5. In a small bowl, combine vinegar and baking soda and add it to ur batter. Stir well with a spatula. Pour into a 6" baking pan and bake it for 50mins or until cooked.
6. Let cool on wire rack.
7. Once cool, slice cake into two and spread cream cheese filling.. top it with the rest of ur cream cheese too... chill for a few hrs.. slice and and oh la la hehhe

Cream Cheese frosting:
1. Beat cream cheese with butter until soft.
2. Turn mixer to low speed, add powdered sugar a little at a time. Whisk until well blended.
3. Add whipped cream, stir through with a spatula.




So to whoever has doubts abt this cake.. dont be.. go to ur kitchen and whip ur batter and u will be feeling as high as me haahah.. hmmm now let me think.. what to bake for dad.. hmmm

Alrighty peeps.. here we go again.. Monday followed by tuesday, wednesday, thursday and ohhhh how i wished today was friday already so that i can call my 'babysitter' to look after Sonia.. we didnt get to go on a movie date last friday but thats ok.. i enjoyed my princess cake project very much..




Talking abt princess cake.. Sonia now no longer wants a princess cake for her bday but instead she wants me to bake her a merry-go-round cake.. gulp! eversince our last Europe trip, my girl has developed the liking of merry go round.. u dont want to know how many times she was on it while we were in Europe.. oh boy.. u dont want to know lol.. thank goodness the one in Euro disney was paid for when we got the entrace ticket so at least her papa didnt hv to fork out 2 to 3 euros per ride!



So anyway this cake was baked last friday.. i didnt get the chance to even take pics till yesterday evening.. the only two pieces that u see here were the only pieces that were left lol.. i gave it out as soon as i sliced it and the rest were eaten by hb who is a hawflakes fan..




Ingredients
(A)
300g butter - i used unsalted Anchor
150g caster sugar
14 eggs yolks
5 tbsp sweetened condensed milk
1tsp vanilla essence

(B)
150g Caster sugar
7 egg whites
1/4 tsp cream of tartar

(C)
180g Hong Kong flour
1 tsp baking powder

(D)
1 tsp orange colouring
2 tsp orange paste

(D)
10 packets of dried tamarind hawflakes


Method
- Preheat oven at 180c for 15 minutes. Prepare a baking tray 8x8
- Ingredients A: Combine butter, castor sugar, sweetened condensed milk, vanilla essence in a mixing bowl. Beat on high speed for 10 minutes until creamy.
- Add in egg yolks one at a time while beating until well blended. Pour butter mixture into a large bowl, set aside.
- Ingredients B: In another bowl whisk the egg whites and cream of tartar until frothy. Add caster sugar a little at a time and continue to whisk for 5 minutes till medium/stiff peak
- Ingredients C: Add in sifted hk flour and baking powder into butter mixture.. fold in gently to combine.
- Pour the batter is egg white. Mix until evenly mixed. Divide into 2 parts. One part is mixed with ingredients D and one with original color.
- Weigh ur batter and divide it by the nbr of layers u want ur cake to be.. mine weigh abt 74g each layer. Bake layer by layer.. alternating between orange and plain batter using upper fire (add hawflakes on every orange layer .. 7mins each layer or until golden brown.. on each orange layer u use abt 15pcs of hawflakes)
- Bake last layer using upper and lower heat for 10mins.. if ur top gets brown too easily.. cover top with aluminium foil.



The taste of this cake is much better than my previous hawflakes layered cake that i baked.. hmm honestly i am not a big fan of hawflakes and will only bake if hb requests for it.. the best part is that i get to keep on trying new recipes each time he requests for one.. ty Cik Wan for sharing this recipe.. my food critic gave me a 3 thumbs up..
