Lapis Roll




When I first saw this at Vin's.. I thought to myself that maybe this shud be one of the "must hv" on my table during Eid.. err after baking it.. I beg to differ lol.. not bec of the taste or the texture of this cake.. believe me.. it tastes just as delish as ur typical lapis cake.. its just that u wont get lots out of this recipe.. for afternoon tea.. yes i will definitely be baking this type of roll cake again and again cos hb loves it.. but to serve it during Eid.. hehhe you got to be kidding Rima!.. 12 eggs to get a roll of lapis legit is a no no unless I plan to slice it thinly hahahah.. and oh u know what last night while blog hopping I found a lapis recipe that uses 60 egg yolks and 700g of butter.. welp!! apakahhhh??






Anyway I think u can use just abt any kinda lapis legit recipe that u like as long as it produces a moist cake... by the end of the day the preparation and the ingredients are the same :o)





Ingredients:
80 g butter (I used 140g butter)
60 g margarine (dont want to use lol)
1 tbsp condense milk
210 g egg yolks
90 g icing sugar
1/2 tsp vanili powder
10 g cake flour
5 g milk powder
Prunes
a few drops of yellow colouring (I added)




Method:
1. Preheat the oven to 160°C and grease a 22x22x4 baking pan with margarine and line with parchment paper. (I used swiss roll pan 10x10)
2. Beat butter until pale and light. Add in condensed milk and continue to beat for another 5mins. Set aside
3. Beat egg yolks, icing sugar and vanili until pale and thick.
4. Add sifted flour and milk powder to egg mixture, add in butter mixture and Stir until well combined.
5. Spread 100 g batter to the pan, bake 3 minutes (used bottom heat) then switch to top heat, continue baking for 3 minutes until golden brown.
6. Spread again 100 g batter, top with a few slices of prunes and continue to bake for 7 minutes.
7. Repeat it until finish.
8. Turn out cake onto wire rack to moderate warm then roll it up.



Note: I think u are better off baking it using 8x8 to get a thicker layer.. easier to roll and u dont hv to worry abt any cracks.. look at mine.. the front part cracked boo hoo.. either cos the layer is too thin or I added too many prunes hehehe

LOL Sue.. dah ku kata.. the next time ur in KL u shud drive to Sg.. boleh kita berfoya foya again hehehe

Raya lama lagi.. puasa belum lagi dah pikir nak bake ape pulak.. haizz ni semua pasal all the advert kat tv lah ni.. tak habis habis promote baju raya siap dgn lagu raya lagi hahah

kalau i tak dapat get my kek lapis frm kuching (was in kuching two days ago ....work), or if i tak attempt this...you know where i'll get my lapis lah he he!

Hehehe KG.. Ape kata u luang kan masa 2 jam.. Pi buat cos nak drive sini pun at least 3hrs tau :op
