Boo Hoo i am down with a slight flu
It started this morning.
I woke up with a headache,
and sore throat
and know
today wasn't gonna be a great day.
Sure enough.
Right now,
my head is so stuffed up.
Yikes.
honestly I hardly fall sick and
when i do it makes me feel
really really restless
Anyway I think I must hv gotten it fm my little Sonia
who caught the flu bug 2 days ago and shes
recovering fast
thank goodness she didnt hv any fever!

Soooo ok finally today I managed to bake
the cake that i hv been wanting to bake
since like last week
Good choice.. thank god i baked it cos u wanna
know what??
This cake is super awesome...
super moist...
delish..
lemony..
and and ohhhhh sooo sooo yummy...
Perfect!
hb ate his first slice in less then 5 mins and said..
"oh wow.. this cake is bloody good!"
So
there u go.. if u gonna bake something
for the New Year
this cake shud be the ONE!

Ingredients
2 cups all-purpose flour
2 tsp baking powder
1/2 tsp salt
1/2 cup margarine or butter, softened
1 cup sugar
2 large eggs
1/2 cup milk
1 1/2 cups blueberries (i used 1 cup)
zest of a lemon (I added)
1 tsp vanilla extract (I added)

Lemon Glaze:
1/3 cup sugar
1/4 cup fresh lemon juice

Method
Preheat oven to 180C (350F).
Grease and flour 9" by 5" metal loaf pan.
In medium bowl, combine flour, baking powder and salt.
In large bowl, in mixer at low speed, beat margarine and sugar just until blended.
Increase speed to medium; beat about 5 minutes, until light and creamy.
Reduce mixer speed to low; add eggs, 1 at a time, beating after each addition until well blended, occasionally scraping bowl with rubber spatula.
Add in vanilla and lemon zest (thats hb zesting the lemon haha)
Alternately beat flour mixture and milk into egg mixture, mixing just until blended.
Gently stir in blueberry.
Spoon batter into loaf pan.
Bake loaf 1 hour 5 minutes, or until toothpick inserted in center comes out clean.
Place sheet of waxed paper until wire rack.
Cool loaf in pan on wire rack for 10 minutes.
Remove from pan and place on rack.
With cake tester or skewer, prick top and sides of warm loaf all over.
Prepare Lemon glaze: In small bowl, mix lemon juice and sugar. With pastry brush. brush top and sides of warm loaf with lemon glaze.
Cool loaf completely on rack.

Applying A Glaze:
Besides adding flavour to a cake, tea bread, or tart, a glaze can give a smooth, lustrous finish and seal in its moisture. Glazes can be as simple as melted jam, or a mixture of sugar and liquid. Set the cake over waxed paper to catch drips. For a flavor that permeates, prick the cake all over, then brush glaze over the top and sides of the still-warm cake.

We decided to stay home instead..

I've been saying these words a lot lately...
to my princess AND my husband.
Gosh.
Why is everyone so hyped up??

My husband is so unlike me.
He is the typical Type A personality.
He gets frustrated easily especially under pressure,
he wants things done fast and he gets flustered.
Needless to say,
if he is to join the Amazing Race,
he'll go crazy.
I.. on the other hand,
a little laid back and when I get stressed,
I either tend to chill or go berserk lol
Unfortunately, my Sonia,
had inherited my husband's personality.
She's hyper,
she's impatient,
she cracks under pressure and gets so frustrated.
Because of this, I'm constantly screaming at these two,
to calm down.
It just drives me NUTS when they get flustered.

Thank goodness my Hairi,
is nothing like these two. LOL.
He has inherited the "laid back, chill" gene...(probably fm his dad)
He is so easy going and relaxed.
Phew!
I don't think I could handle 3 specimens of Type A in the house hehehe

Anyway we got home fm KL safely last night
and since hb will be around till New Year
I dont think I will be baking as much
Hairi went back to his camp this morning hoping he get transfered and
guess what??
he will be stuck in the same camp for the next 2yrs
muuuahahaha (sorry son.. ur stuck being a Rifleman)
while some of his camp mates were transfered to different camps
Poor boy but hey look at the bright side:
You will hv the chance to go to Hawaii for training
Ok ok mama will shut up now :ox

Argghhhh I still hv a lot of Christmas shopping to do
bef this weekend!
Gulp!!

We got into KL safely... hb is resting now and I hv been munching non stop lol.. enjoy ur weekend peeps and do try out this banana cake recipe cos its niceeeee! heheh

Ingredients
250g butter
3/4 cups caster sugar
2 cups self raising flour
5 eggs grade A
1 cup mashed bananas
1/2 tsp bicarbonate of soda
1 tsp vanilla essence
150g semi sweet cooking chocolate grated or chopped (I used chocolate rice)

Method
Pre heat oven @175C. Sieve flour . If not using self raising flour you can use plain flour +1 tsp baking powder. Add bicarbonate of soda into mashed bananas and mix well put aside.
Beat butter till white and add in sugar. Beat till sugar dissolved.Add eggs one by one beat till creamy. Add in vanilla essence and mashed bananas, stir well. Fold flour bit by bit till finish. Add in chocolate and fold again slowly, don't fold too much as the chocolate will melt.
Scoop mixture into muffin cups and bake for about 15-20 minutes or till cooked. (I baked mine for 60mins using 8x8" cake pan)

What a shitty day today...
dont u just hate it if someone
is talking nonsense abt u??
dont u just love it the way they twist

turn their words so as to make u look like a moron..
ohhhhh ohhhhh better still...
when that person literally said...
"maybe shes just not happy when someone is better off than her"...
OH MY GOD... u got to be kidding right??!!!
First u talk behind me
then u judge me?
Am I still living in the olden era where
jealousy... showing off yadda yadda yadda
is the IN thing?
That is sooooooooooooo not my kinda thing..
if I am not happy..
I will say it out
but if I am being misunderstood for being a biatch...

Sorry peeps..
