I hv been wanting to bake a buttery cheesy cake since like for-everrr.. so since i bought lots of cheese fm our last trip.. I decided to try out bro rozzan recipe.. cake is delicious... moist and its really simple to make!


Ingredients
8 grade A eggs (use only 6 egg whites)
250g butter (i used unsalted butter)
250g caster sugar
220g cake flour
100g cheddar cheese (grate)
30g hazelnut (chop) - (optional)
1 tsp baking powder
1 tbsp ovalette
1 tsp vanilla extract
1 tbsp cocoa powder
1 tsp chocolate paste/emulco (optional)
1/8 tsp salt (i added)




Method
Melt butter using double boiling method.. put it aside
Sieve flour with baking powder and salt in a mixing bowl
Add eggs, ovalette and sugar to flour mixture
Whisk on high speed for abt 10 mins or till batter turn thick and fluffy
Using rubber spatula add in vanilla and melted butter and mix till well blended
Add in cheddar cheese and hazelnut and continue to mix well
Scoop 3 ladle of batter and add cocoa powder and chocolate emulco and put it aside
Pour plain batter into a 10 x 7 pan (i used 9" round pan)
Add 1tbsp of chocolate batter at a time all over the plain batter
Swirl using chopstick and bake on a preheated oven of 180C for 50mins

The one and only cake that i baked for Eid... didnt even taste it but the kids seems to love it... so i guess its ok.. recipe fm Martha Steward



Ingredients
3/4 cup unsweetened dutch process cocoa powder
3/4 cup hot water
3 cups all purpose flour
1 tsp baking soda
1 tsp baking powder
1 1/4 tsp coarse salt
1 1/2 cup (3 sticks) unsalted butter
2 1/4 cups sugar
4 large eggs
1 tbsp plus 1 tsp pure vanilla extract
1 cup sour cream

Chocolate ganache frosting



Method
Preheat oven to 350F. Line standard muffin tins with paper liners. Whisk together cocoa and hot water until smooth. In another bowl. whisk together flour, baking soda, baking powder and salt.

Melt butter with sugar in a saucepan over medium low heat, stirring to combine. Remove from heat and pour into a mixing bowl. With an electric mixer on medium low speed, beat until mixture is cooled, 4 to 5 mins. Add eggs, one at a time, beating until each is incorporated, scraping down sides of bowl as needed. Add vanilla, then cocoa mixture and beat until combined. Reduce speed to low. Add flour mixture in two batches, alternating with the sour cream, and beating until just combined after each.

Divide batter evenly among lined cups, filling each three quarters full. Bake rotating tins halfway thru till a cake tester inserted in center comes out clean, abt 20 mins. Transfer tins to wire racks to cool 15 mins, turn out cupcakes onto racks and let cool completely.

To finish, use a small offset spatula to spread cupcakes with frosting. Refrigerate up to 3 days in airtight containers, bring to room temp and garnish with chocolate curls just bef serving.

it's been a few days
that I hadn't update my blog.

The last couple of days has been crazy
I walked so much that my legs
are getting used to Adelaide ground hahaha
We did Mt Lofty
We went to Mt Barker with George and wifey
Went to Westfield in Marion with Joey
and of cos to Central Market too

Yesterday I had the pleasure of meeting
one of my blog mates Sue
I actually met her through blog hopping..
or was it when she put up a comment in my blog..
errrr soorryyy Sue
Anyway
Saw her blog,
read it
and thought..
hey! she lives in Adelaide
A place where hb once called home
We met for lunch
Had fun talking and walking down Rundle Mall
Wished it cud have been longer
ya know... hv coffee and cakes... talking
minus the whining.. shouting... of my little Sonia lol
But both of us had to be back on certain time..
Nevertheless it was great to finally put
a face to a name
Sonia had a blast and so did I
Thank u Sue for making the time to meet me and Sonia!

Rima is in Adelaide and
hb is in Brisbane for work for the next 2 days..
he will fly back to Adelaide late Thursday fm Melbourne (confused again?? hahha)
and we will spend the weekend here
bef driving to Melbourne together (still confused?? me to :op)

Anyway we had a long day today
Went to Central Market
Went to Glenelg
Did our typical shopping at Rundle Mall
and had coffee with George and Junie (family friends)
Ohhhhh how i loveeeeeeee the coffee here!!

Just a short one from me today.
I hv to run a few errand and i better start early
Yesterday I had a blast with my bff (each time i use the term bff my girlfriends will flip hahhaa)
For the first time in our 10yrs of friendship
we decided to spend our
afternoon in JB
ahem.. we drove there
Did our groceries..
Had our lunch and coffee break
and drove back home
Will definately do this more often
Next agenda.. drive to Malacca and come back the same day
3 crazy women.. 3 lovely kiddoes
2 1/2 hrs drive..
in a car
FUN!!

After my cake blunder.. I decided to gv this simple recipe a try.. of cos this time round I used upper and lower fire and it worked..



Ingredients
200g butter
200g sugar
4 large eggs
200g self raising flour
1 tbsp cocoa powder
8 pieces Oreo biscuits - chopped
3 pieces Oreo biscuits - chopped for toppings
1 tsp vanilla essence

Method
Preheat oven at 175 degrees Celsius. Greased 8" and put aside.
Sieve flour and cocoa powder and put it aside
Beat butter, sugar and vanilla essence till creamy. Add in eggs one at a time and keep on beating till fluffy. Add in the Orea biscuits and stir well. Add in the flour mixture and fold till well. Pour the mixture into tray and even the top and sprinkle with the 3 pcs of chopped Oreos. Bake for 40 minutes or till cooked.
