The one and only kuih that I managed to prepare this week.. Love the taste.. love koleh koleh heheh

Ingredients
A
3 cups thick coconut milk (I used KARA)
1 pandan leaf
1/2 tsp salt

B
300g green beans flour
4 cups water
1 tsp brown colouring

C
420-450g palm sugar (I used 260g)
1/2 cup water

D
1 1/2 cup coconut milk
a pinch of salt

Method
Mix B and let it for 2 hours or overnight.
Cook C till dissolve, let cool, strained and place it aside.
Cook D till form 'tahi minyak' and place it aside.
Mix A, B and C and stir well. Cook on a medium heat and keep on stirring continuously for 15-20 minutes or till it looks a bit 'oily'. Once cooked, pour mixture into the tray which has been greased with oil. Flatten it and sprinkle 'tahi minyak' on it. Let the kuih to cool then cut.

Phew!!
I haven't been a good blogger lately
because
I had been really busy.
Super busy.

So,
I had been on my own
for the past few days -
ferrying my girl around,
getting her to Go Go Bambini,
to play with other kiddoes,
Getting my baking stuff organised
for tmrw's baking project,
Paying month end bills,  
Weekly groceries shopping..
on top of
cleaning,
cooking,
and just getting
everything done..

All these within a week... all this with my
super duper active Sonia..

And now,
it's almost over.
And hb will be home tomorrow.
Finally... 
I can breathe now.

Bored shitless.. I hv tonnes and tonnes of stuff to do but I'm too lazy to do it.. too lazy to even update my blog last night.. hmmm so what did i do all day long yesterday... I met my girl friends.. we went to town and had fun of cos.. Sonia was behaving pretty well I must say cos I managed to drive without having to hear her shouting.. I managed to finish up my coffee for a change.. I also managed to sit down with them and enjoy my sticky date pudding too... so thats good..

This morning Sonia woke up at 4am and didnt want to go back to sleep.. I managed to put her to bed again tho (she finally fall asleep after an hour and half)and woke up again at half past 7.. grrrrr... shes been like that since the day hb left..waking up earlier than usual and sleeping very little during day time.. :o(

Oh yeah.. I got my lappy back... very frustrated cos I lost all the programmes.. lost all the links that i hv been saving all this while.. and lost tonnes of photos.. am very disappointed with myself for not saving it in my thumb drive.. how can i get back some of our trips photos? how can i get back some of Sonia's baby photos? and also her first birthday photos... arggghhhhhh... moral of the story.. save it bef its too late!!

WHEN THE CAT IS AWAY.. THE MICE GOT BORED

My super dupper husband is away
for work for a week.
One loooooooong week,
might I add.
Especially having to handle
everything on my own.
Oh...
the days are long.
It's only been a day since he's been gone,
and we managed so far.
More importantly,
I haven't gone insane yet.
I'm sure come this weekend,
I will need some
SERIOUS RETAIL THERAPY.

Anyway,

Soooooo ok what can I say abt this cake except its simple to prepare.. kids love it cos it uses kaya as filling and its one of those cake that can never go wrong even when u are not in the mood to bake..blaaahhhhh

Ingredients:
100 gm. unsalted butter
125 gm. plain flour
120 gm. coconut milk (santan)
1 egg - lightly beaten
200 gm. egg yolks (about 10 eggs)
300 gm. egg white
1/4 tsp. salt
1 tsp. cream of tartar
150 gm. fine sugar
1 tsp. pandan paste
a drop of apple green colouring

Filling: Kaya

Method:
(1) Melt butter then stir into plain flour till smooth.
(2) Warm up santan (coconut milk) and mix with egg and egg yolks. Then stir into the above mixture.
(3) Whisk egg white with salt and cream of tartar till frothy. Add in sugar and continue whisking till fluffy.
(4) Fold egg white into the egg yolks mixture and mix thoroughly. Divide mixture into 2 portions. Add pandan paste and green colouring into one portion and leave the other plain.
(5) Pour into 9" square tin and bake at 175C for about 30 mins. or till cooked. Leave cakes to cool completely on wire rack.
(6) Sandwich both cakes with kaya. Slice and serve.

I don't have a lot of cookbooks... although my hubby would like to differ. I would say, I have between 45-50.. err maybe more cookbooks. Not a lot... comparing to other home cooks. I know who have HUNDREDS...Repeat... HUNDREDS. So.. 45-50 cookbooks ain't much.

Now its probably the time you would say... "Rima, get your recipes online. Stop wasting your money. You don't need cookbooks." You are right. There are thousands of recipes online at my disposal. BUT nothing brings me more satisfaction and comfort than reading a good cookbook in bed or on my couch...with a blankie covering my slim, long legs hahhahhaah dream onnnnn!! Ahhh....HEAVEN... And yes, when I read a cookbook, I not only drool at the pictures, but fantasize at the ingredients... imagining how they would taste. Weird? Yeah, I'm quite a freak.

Today I got myself another cookbook.. well its not really a cookbook.. its a quick and easy kids' cake book by Sara Lewis.. well this book gives u great ideas on how to decorate kiddoes cakes with all sort of design.. I dont really know why I bought it.. its not like I have to bake Sonia's bday cake tmrw hehhe.. oh well.. My hubby has 'banned' me from buying anymore cookbooks. He swears I have every recipe on hand of every food and cakes in the world now. Yeah right! He knows he can't stop me.

Soooo ok anyway... Today I managed to bake sultana cake bef we went to town for dinner.. I love this cake to bits and will usually try to bake it at least once every few months.. I added 1/2 tsp of cranberry extract this time round.. the smell .. oh la la.. u can get this recipe fm my previous post if u wanna gv this recipe a go .. happy baking!!

A super simple thang to bake.. any newbie can do it..  pointer: Do not overbake cos that will break ur cake when u roll it.. another piece of advice.. do not spread too much buttercream or any kind of jam on ur swiss roll or it will get messy when u roll it.. gv this recipe a try cos not only its a straight forward thingy.. it also doesnt cost u anything.. err well except 20mins of ur time hehehe :op



Ingredients
120g melted butter (i used unsalted and added a pinch of salt)
8 nos. egg yolks (i used cold eggs)
4 nos. egg white
80g fine sugar
75g plain flour
30g milk powder
1 tsp ovalette
1/2 tsp chocolate emulco
1/2 tsp coffee oil (I used coffee emulco and added brown colour)
1/2 tsp orange emulco
a drop of orange colouring(optional)- (I added 5 drops)
1/2 tsp baking powder(I added)



Method
Beat egg yolks, egg whites, sugar, flour, ovalette and milk powder together until thick and fluffy.
Pour in melted butter and mix till thoroughly mixed.
Scoop out 2 ladle spoonful of batter into a bowl. Add in chocolate paste and coffee oil and stir till well mixed. Place into a piping bag. Add in orange emulco and orange colouring into the balance batter and divide into 2 portions. Pour into 2 nos. 10" x10" square trays.
Pipe patterns onto the orange batter, write the letter 'C' on top. Bake at 190C for about 12 minutes. (My oven I used 175C for 10 minutes.) Leave to cool. Spread butter cream(I used nutella hehhe) or jam on top and roll tightly. Leave it in the fridge to set and then slice.

Sorry guys! i hv been busy for the last couple of days.. we had friends and relatives over yesterday and I"ve been baking like there was no tomorrow hahha.. anyway i had all my baking pics taken but unfortunately after i load it last night and had wanted to update my blog this morning.. my lappy got "sick" .. argghhhhhhhh.. it looks like i hv to wait for a couple of days bef i cud do so..

Been busy.. mom and dad came over.. i cooked kacang phool (medamme beans) for brunch.. cooked Hokkien noodles for dinner.. in between i managed to bake lapis rempah (moms fav layer cake) and also macaroons.. first time baking layer cake in my so ever virgin oven.. thank god it came out perfect..



Unlike mom.. i am not a big fan of spice layer cake.. i will bake it tho but i will not eat more than a slice.. nevertheless i will gv this recipe 4* simply cos the cake turned out perfect.. its soft and moist.. ty bro rozzan for sharing this wonderful recipe!

Ingredients
20 egg yolk (A grade)
5 egg white
13 oz caster sugar
18 oz butter
5 oz Hong Kong flour (if u dont hv u can use cake flour)
1/2 can of condense milk
2 oz almond powder
5 tsp mix spice
1 tsp baking powder
1 tsp vanilla essence



Method
(1) Sift flour
(2) Cream butter and condensed milk together till fluffy. Add in vanilla
(3) Beat egg whites with baking powder till fluffy.. add sugar bit by bit until stiff and then add in egg yolk one at a time and beat till fluffy.
(4) Mix butter mixture with egg mixture together and then fold in the flour and mix till evenly mixed. Add almond powder and mix spice.
(5) Grill in oven (180 - 200C) layer by layer (5 - 7 mins each layer) in a 8x8" sq. tin until all used up. For the last layer, when the top is 1/2 cooked, turn to oven heat and bake at normal oven temp. for another 15 mins.

Using left over egg whites..

Ingredients
4oz egg whites
8oz icing sugar
9oz chocolate chip
5oz cornflakes (crunch a little)
4oz sunflower seeds (i used almond slice)
1tsp vanilla



Method
With a stand mixer, beat egg white till slightly bubble
Add sugar a little at a time and continue to beat will thick and fluffy
With rubber spatula, add in vanilla
Add cornflakes, chocolate chip and sunflower seeds
Bake on preheated oven of 160C for abt 10mins or till surface is slightly brown

Oh! I'm cranky today. It's that time of the month. Everyone drove me nuts today. I was about to disown my kids and throw my hubby out. Every little thing flipped me off. Oh yeah! I think if you say, "Boo!" to me right now, I'll probably chew your head off.

Anyway, thought I tell you a bit about myself. I'm usually patient but I can be impatient. Especially if people don't listen to my instructions. That's why I'm not a good teacher. Teaching will be the last profession I would pick for myself. I rather be the garbage woman. So, yesterday, I told my hubby to help me to clear Sasha (our cat) litter and food bef he goes to work.. his reply..

"If u dont want to wake up to the smell of Sasha "spoilt" food.. dont gv her wet food then"

Whoooooaaaaaaaaa!!! Wait a minute. You mean, u rather not gv her wet food then helping me? You mean, u cannot even help around anymore?

Today wasnt any better.. had a super long day.. Sonia woke up early and was not in her best behaviour.. she only slept for 45mins in the afternoon and was cranky.. arghhh.. pls pls.. come soon already.. my body is aching and I cant stand myself either hahaha.. believe me.. if its not cos of my upcoming PMS .. I am a nice woman.. :op

This recipe is good… scarily good. I say scary because I could seriously eat the entire thing by myself in a very short period of time! hb loves the aroma and taste of cranberry in this pound cake..  

So heres the deal.. yes u hv to sift the flour 3 times (worth ur effort) dont worry abt the amt of sugar it uses (gv u that crunchy top) .. the eggs.. yup this recipe uses 7 eggs (doesnt taste eggy at all).. and yes u dont hv to preheat ur oven before baking..

Follow the recipe to the tee or you can play around with the extracts.. u can combine 3 types of extracts if u like.. lemon, vanilla and almonds extracts .. i decided to use 2tsp of vanilla and 1/2tsp of cranberry extract .. superb combination!! and oh the next time i bake this cake, i will reduce the temp to 175C simply cos my oven is still a virgin hahhaa (cake turned brown after 20mins into baking, had to cover with aluminium foil after 40mins into baking)

This cake is intensely rich, moist and smooth.. yummy!!



Ingredients
2 sticks (1 cup) unsalted butter, softened, plus additional for buttering pan
3 cups sifted cake flour (not self-rising; sift before measuring) plus additional for dusting
3/4 teaspoon salt
3 cups sugar
7 large eggs, at room temperature 30 minutes
2 teaspoons vanilla (i used 2tsp of vanilla and 1/2 tsp of cranberry extract)
1 cup heavy cream



Method
Put oven rack in middle position, but do not preheat oven.

Generously butter pan and dust with flour, knocking out excess flour.

Sift together sifted flour (3 cups) and salt into a bowl. Repeat sifting into another bowl (flour will have been sifted 3 times total).

Beat together butter (2 sticks) and sugar in a large bowl with an electric mixer at medium-high speed until pale and fluffy, about 5 minutes in a stand mixer fitted with paddle attachment or 6 to 8 minutes with a handheld mixer. Add eggs 1 at a time, beating well after each addition, then beat in vanilla. Reduce speed to low and add half of flour, then all of cream, then remaining flour, mixing well after each addition. Scrape down side of bowl, then beat at medium-high speed 5 minutes. Batter will become creamier and satiny.

Spoon batter into pan and rap pan against work surface once or twice to eliminate air bubbles. Place pan in COLD oven and turn oven temperature to 190C. Bake until golden and a wooden pick or skewer inserted in middle of cake comes out with a few crumbs adhering, 1 to 1 1/4 hours. Cool cake in pan on a rack 30 minutes. Run a thin knife around inner and outer edges of cake, then invert rack over pan and invert cake onto rack to cool completely.

I love to take photos
but sometimes, I do go overboard.
I took 65 photos the past 2 days...
Yeah! 65!! And we didn't go nowhere.
Out of the 65, only half made through the cut.
I delete those that are blurred, bad lighting..bad photos..
BUT sometimes, it's so hard to delete them.
I have to ask myself how many photos of so and so do I need?

Anyway,
I've been trying to take a picture of Sonia doing silly things.
She started her nonsense a few days after we moved.
I've been putting the camera in my pocket for the past few days,
in the hopes to catch her being silly.
She probably thinks her mother is the camera or some spy.
I managed to catch some yesterday.




She decided to climb into the fish pond!




Below is how our basement look like.. theres a mini living area.. a guest room and 2 toilets.. a fish pond area and to the left is where my washing area is.. oh my pantry is next to my washing area (originally bomb shelter)

Besides 2 pools.. we hv tennis, basketball court and also gym area in this cluster house.. Papa has been taking Sonia for a swim every single day.. both love the pool and as for me.. i cant wait to start going to the gym (sure sure) hahahahha






Downturn.. u see how high each house is?? 4 storey up and a basement.. thats the reason why i've not been to the gym muuahahah..

The thing abt moving into a cluster house (house with condo facilities), I no longer have a garden that I can be proud of.. nor I hv the advantage of planting pandan leaves and banana tree.. well honestly?? i dont mind... after 5yrs of living in a house with garden.. i kinda get sick of it? u see.. i hv to handle everything.. fm the house to the garden.. so after awhile.. when ur garden doesnt look like a garden anymore.. thats the time when u wish that ur garden is maintain by a developer  hehhe.. the only downturn abt this place is.. i no longer hv "the" spot where i can take good pic of all my bakes.. maybe i will.. who knows.. 

So ok.. this is moms and hairi's fav buns.. i love this recipe cos it didnt use any bread improver or softerner.. and oh oh by the way.. my son is coming home tonight.. yippieeeee..



Ingredients
Bread Dough
(A)
500 gm. Bread flour
80 gm. caster sugar
8 gm. instant yeast
250 gm. cold fresh milk
50 gm. beaten eggs

(B)
65 gm. butter or margarine
1 tsp. salt

Topping: Mix together and spoon in piping bag.

100 gm. Butter
50 gm. sugar
1/2 egg



Method:
(1) Combine ingredients (A) into a mixer bowl and knead for about 8 mins. Add in (B) and continue kneading for about 8 - 10 mins. till dough is developed, smooth and pliable.
(2) Rest dough for about 1 hour.
(3) Divide dough into 60 gm. ball, roll it round and leave to rest for another 10 mins.
(4) Roll out the 60 gm. ball of dough into a tongue (oval) shape and roll into a swiss roll, tighten and seal properly.
(5) Leave to proof for about 45 mins. Slit a line on the surface of the proved bun and pipe topping on top.



(6) Bake at 190C for about 10 - 12 mins. or till golden brown.
(7) Remove and cool on a wire rack.
(8) Serve with coffee or tea. Enjoy!!!
