Assortment of Buns




Not gonna start blabbering.. gonna keep it short.. been one busy day today.. was out to Spotlight to check on curtain materials for our new home..  i went to carrefour too.. and to my fellow Singaporean.. go to carrefour and get urself cream cheese cos they are selling at $3 per block.. yes yes.. its dirt cheap.. guess how many i bought?? hehhe .. also the house agent came by today with prospective buyers.. well this week alone we had ppl over a couple of times... yikes!!



Anyway i managed to bake a few types of bread  using the same basic sweet bun dough (ty BM.. u get things done! hhehe).. recipe fm Alex Goh..

Ingredients
(A)
480g bread flour
120g plain flour
110g sugar
10g salt
20g milk powder
4tbsp instant yeast
(B)
1 egg
300ml cold water
(C)
60g butter

Fillings of ur choice

Method
Basic sweet dough
Mix (A) till well blended
Add (B) and knead to form a dough
Add (C) continue to knead to form a smooth and elastic dough
Cover dough with clear film. Let it prove for 50-60mins or till double its size
Use finger and pressed into the dough. It should show a clear finger tip mark but the dough shud not sink. now its ready to use making bread and bun
Divide dough into 70g portions. Mould into balls and put them aside for 10mins




Roll dough out flat to make rectangles (14cm x 12cm) place some of the red bean paste/apple filling at one end and cut strips at the other end with a sharp knife. Roll them up from the filling end
Put it on greased pan and leave to prove in a warm place for 45mins or till they double in size
Bake at preheated oven of 190C for 15mins



Flower red bean bun 
Divide the dough into small balls. Then fill the dough with red bean and shape it into a smooth balls. Let the dough proof for 15 minutes.
Slightly flatten each dough and use a scissor (i used sharp knife) to cut the edges into 5-8 flower petals. Continue to proof for 30 minutes.
Egg wash the doughs then top with some sesame. Bake at 190'C preheated oven for 15 minutes until golden brown.



For coconut fillings
Shape into small balls. Fill coconut fillings and shape into a smooth balls. Put it on a greased chiffon pan and let it prove for 45mins.. bake at 190C for 15mins



Savoury Buns
Divide into small balls. Flatten it and place it on a paper casing.. spread tomato ketchup, slice chicken sausage and top with mozarella cheese. Let it proof for a further 45mins and bake at preheated oven of 190C for 15mins
