I love mangoes and was very curious to see this recipe...wasn't really sure what to expect because I've never cooked/baked mangoes before plus I've always enjoy them fresh... all i know lots of food blogger hv tried baking it and simply loved it... so since i hv 4 not so sweet mangoes standing in my fridge.. i thought why not gv it a go ey..

The aroma coming from the oven as this bread was baking was wonderful...it tasted very similar to banana bread tho. The mangoes did impart a very subtle flavor to the bread, but it wasn't very prominent... Sonia ate the whole slice to herself... i like it but not crazy abt it.....hb on the other hand loves it..he ate it with ben&jerry ice cream hehhe

Ingredients
3 large eggs
3/4  cup flavorless oil, such as canola or safflower (i used canola oil)
2 1/2 cups all purpose flour
1 cup sugar
1 tsp baking powder
1 tsp baking soda
1 1/2 tsp ground ginger
1 tsp ground cinnamon
1/4 tsp salt
1/2 cup (packed) light brown sugar
2 cups diced mango
3/4 cup moist, plump golden raisins
Grated zest of 1/2 lime


Method
Center a rack in the oven and preheat the oven to 350 degrees F. Butter an 8.5 x 4.5 inch loaf pan, dust the inside with flour and tap out the excess. Put the pan on an insulated baking sheet or on two regular baking sheets stacked one on top of the other. (This extra insulation will keep the bottom of the bread from overbaking).

Whisk the eggs and oil together.

In a large bowl, whisk together the flour, sugar, baking powder, baking soda, spices and salt. Rub the brown sugar between your palms into the bowl, breaking up any lumps, then stir it in. Pour the wet ingredients over the dry, switch to a sturdy rubber spatula or wooden spoon and mix until blended — the batter will be very thick (really more like a dough than a batter) and not easily mixed, but persevere, it will soon come together. Stir in the mango, raisins, and zest. Scrape the batter into the pan and smooth the top with a rubber spatula.

Bake the bread for 1.5 hours, or until it is golden brown and a thin knife inserted ino the center comes out clean. (If the bread looks as if it’s getting too brown as it bakes, cover it loosely with a foil tent). I did this at 45 minutes. Transfer the pan to a rack and cool for 5 minutes before running a knife around the sides of the pan and unmolding. Invert and cool to room temperature right side up on the rack.



Errr well i am supposed to bake something using half and half cream and sour cream since its expiring tomorrow and look at what i baked today! welp i better sit down and think hard what to do with my 1L of half and half and sour cream by tonight

Desert of the day!  



Ingredients
10g of konnyaku jelly powder (i used jelly powder)
200g sugar
250ml evaporated milk
800ml water
3/4tsp of rose syrup (i used 2tbsp)
1 cup of cincau (dice it)
1tsp of pink colouring (i add it to adhance the colour)

Method
Bring to boil water, sugar, jelly powder, milk, rose syrup.
Add cincau and pink colouring
Pour into desire mould
Refrigerate for 2hrs

Its a lazy sunday today.. hb is not around cos he has to go to work.. i know i know.. sunday = working? oh well.. this is what u call a hardworking and responsible Manager.. puking right now! hahaha


Baked Ina Garten's pound cake using my new Bavarian Bundt pan.. turned out very pretty indeed... worth every cents of my money paying for it hehehe.. Unfortunately i am not in the mood to decorate my cake... didnt even dust it with icing sugar.. nevertheless this cake is one of my fav pound cake recipe..  i've baked it a couple of times bef... its moist, rich and oh la la.. :op

Recipe taken from Back to Basics.

Ingredients
1/2 pound(2 sticks) unsalted butter, at cool room temperature
1 1/4 cups sugar
4 extra large eggs; at room temperature
2 tablespoons honey
2 teaspoons pure vanilla extract
1 teaspoon grated lemon zest
2 cups sifted cake flour (ran out of it so i used HK flour instead)
1 teaspoon kosher salt
1/2 teaspoon baking powder


Method
Preheat oven to 350 degrees F.
Grease the bottom of an 8 1/2x4 1/2x2 1/2 inch loaf pan.
Line the bottom with parchment paper, then grease and flour the pan.

Using an electric mixer fitted with the paddle attachment,
cream the butter and sugar on medium speed for 3-4 minutes, until light.
Meanwhile, put the eggs, honey, vanilla and lemon zest in a glass
measuring cup but do not combine.
With the mixer on medium low speed, add the egg mixture,
one egg at a time, scraping down the bowl and allowing each egg to
become incorporated before adding the next egg.

Sift together the flour, salt and baking powder.
With the mixer on low speed, add it slowly to the batter
until just combined.
Finish mixing the batter with a rubber spatula and pour it into the
prepared pan. Smooth the top.
Bake for 50-60 minutes until a toothpick inserted in the center comes out clean.
Cool for 15 minutes, turn out onto a baking rack,
and cool completely.


NOTE: If ur using bundt pan.. greased and flour it well bef pouring batter... make sure after baking, u gv it a good 15 mins before unmoulding it... gd luck!

I bake alot and mostly cakes... if i do want to bake cookies, i make sure i hv ample time in hand... especially like sugar cookies with frosting... so today since mom and dad is around i decided to do a fun type of cookies... let me warn u... its time consuming tho but its worth ur effort..very buttery and kids love it! ahem ahem... mom and dad ate too! another pointer... u can also use kokocrunch for the teddy ear if u want.. less time consuming...recipe fm MR

Ingredients
8 oz unsalted butter (try to use a good butter)
1/2 cup sugar
1/4 tsp salt
1 1/2 tsp vanilla essence
1 egg yolk
2 1/2 cup all purpose flour
cocoa paste/ colouring
chocolate chips

Method
1. In a stand mixer, beat butter and sugar till fluffy
2. Add in salt and vanilla and beat again
3. Add egg yolk .. beat till incorporated
4. Add in flour bit by bit.. u can either use ur mixer to do it (low speed)or mix it with rubber spatula
5. Divide dough into 2 portion and add chocolate paste to one
6. Wrap each portion with cling wrap and refrigerate it for an hour or more
7. Make bear face using original portion and chocolate portion for the ear. Use chocolate chip for its eyes
8. Bake at preheated oven for 15mins at 170C



NOTE: U can also use lollies stick to make a lollies cookies... just stick to the bottom face of ur teddy before u bake ur dough..

This morning i woke up with bad news.... Michael Jackson and Farah Fawcett had passed away... i hv been watching BBC and CNN all day... just couldnt believe MJ had died... hes too talented and young... :(

Heres the deal... i dont take pics of the dishes that i cook every day... i dont think i hv the time for that tho hb encourage me to do it... he said it adds variety to my blog... well i will hv to think abt it first before embarking into "dishes" entry...



Anyway since i am fasting today i decided to cook something simple.. we are italian for a day again hehehe.. aglio olio prawn pasta and of cos Pizza... i decided to bake foccacia bread and use it as my base instead of ur typical pizza crust.. u can get foccacia bread recipe in my previous entry.

Gv it a go cos hairi ate 3 mini pizza at one go for lunch! recipe fm BH.  

Ingredients
1 focaccia bread
1 tomato diced
1/2 tbsp red pepper diced (I used 1 whole green pepper)
pasta sauce( I used a bottle of Ragu pizza sauce)
shredded cheddar cheese
shredded mozzarella cheese (original recipe don't have)

For beef mixture
500g minced beef
1 tbsp mixed Italian herbs
1 big onion diced
1/2 tsp chicken stock(I forgot to add lol)
Chinese celery and spring onions to estimate sliced thinly
salt n black pepper to taste

Methods
1. Washed and drained minced beef. Add beef into wok for browning.(no need oil). Cook till the juice almost dry and add in Chinese celery, spring onions, salt chicken stock, onions and mixed herbs. Let it cook for a while. When ready put aside.
2. Cut bread to halves and halves again. Spread some pasta sauce onto bread, sprinkle minced beef mixture followed by tomatoes, red pepper and cheese. Grill bread in oven for at least 6 minutes or till cheese has set. Ready

I didnt cut my bread into halves... i used a 9" pie dish and bake my bread in it.. once baked and cool spread pizza sauce and sprinkle minced beed mixture and topping. I baked mine for 12 mins or till cheese is slightly brown. Enjoy!

Very excited today cos finally with a little time in hand i managed to bake Dorie's pound cake... yippieeee... the aroma is so so overwhelming right now! 10 mins to go and we are done with the baking... I will load pics/ gv my review when i get back fm town... Sonia's injection appt is in 2hrs time so i better get my %$* out of here! weeeeeeeee
 


My verdict
I ate a slice the moment i got back fm town... honestly? i prefer Ina Garten honey vanilla pound cake which i baked last april... the texture is slightly different... as u already know i am a huge fan of pound cake and i prefer mine that taste like SARA LEE... u know the moist type.. the rich type? well according to Dorie her pound cake improves with time, its taste and texture becoming even better after ripening and can keep for up to a week at room temp... well who knows i might like her pound cake better than the honey pound cake tomorrow? will definately keep u updated!

I ate a slice again today (25/6/09)...nope it didnt do me at all... still prefer Ina Garten honey vanilla pound cake... oh well...

Ingredients
2 cups of all purpose flour or 2 1/4 cups cake flour
1tsp baking powder
1/4 tsp salt
2 sticks (8 ounces) unsalted butter at room temp (226g)
1 cup sugar
4 large eggs at room temp (i used 6 small eggs - 240g)
1 tsp pure vanilla extract

Method
1. Preheat oven to 180C
2. Whisk together flour, baking powder and salt
3. Working with a stand mixer in a large bowl, beat the butter and sugar on high speed until pale and fluffy, a full 5 mins. Scrape down the bowl and beater and reduce mixer speed to medium.
4. Add eggs one at a time, beating for 1 or 2 mins after each egg goes in.
5. As ur working, scrape down the bowl and beater often. Mix in vanilla extract
6. Reduce the mixer speed to low and add the flour, mixing until it is incorporated - dont overmix!
7. Scrape the batter into the buttered pan and smooth the top
8. Bake in a 8 1/2 x 4 1/2 inch loaf pan for 60 mins if ur using 9 x 5 pan u will hv to bake urs at 70 - 75 mins
9. Remove cake fm oven, transfer the pan to a rack and let it rest for 30 mins

Marbled Pound cake
After the batter is fully mixed, transfer half of it to another bowl and gently blend in 4 ounces of bittersweet chocolate, melted and cooled. Alternate large spoonfuls of the light and dark batters in the pan, then run a kitchen knife in a zigzag pattern thru the batters to marble them (i did one zigzag lol... didnt know i had to do the zigzag 6 times until i read her marbling technique after placing my loaf pan in my oven hahha!!)


Serving
U can serve a thinly cut pound cake with chunky fruit jam on the side or cut it thickly and u can serve it with ice cream or syrupy fruits.

A super easy snack that u can prepare for ur family... i did this right after i baked my last tray of bread.. super fast,  yum yum and addictive! and best of all.. it cost almost nothing to make ur own muesli bar! Recipe taken fm lemongrass blogspot

Ingredients
2 cups of rolled oats (not instant oat ok... u can get it fm carrefour)
2 cups of cereal of ur choice (cheerios, honey cornflakes, cocoa pops, rice bubbles, bran flakes etc etc)
60g nuts of ur choice (almonds, peanuts, walnuts etc etc)
50g of dried fruits (i used mix fruits)
1/4 cups chocolate bits (optional)
150g butter
1/4 - 1/2 cups honey
1/4 cups brown sugar (optional)
I used 1/4 of honey and 1/4 of brown sugar

Method
-Preheat oven to 180C. Line a lamington/slice pan (18cm x 25 cm) with baking paper and make sure the baking paper overhang a bit so its easier for u to pull it out of the pan once its baked
-In a pot, add butter and honey (and brown sugar if using) and cook till sugar dissolved. Lower ur flame and continue cooking till butter mixture thickens a bit. Set it aside to cool down a bit.


-In a big bowl, add rolled oats, cereals, dried fruit, choc bits and stir to combine.
(I used rolled oats, honey flakes, almonds, mix fruits)



-Pour the butter mixture into the oat mixture and stir until all combined and coated with butter mixture.



-Spread the muesli into the slice pan and press till firm and not crumbly. Bake for 30 minutes and then cool completely in the pan.
-Once cool let it sit in ur fridge for a few mins so as its easy for u to slice it!

Ok ok now i know why its called pig in the blanket... hb said its cos sausage = pork = pig in the blanket... and since i am using chicken frank i shud called mine chicken in the blanket? hahahha

Ingredients
300 grm of flour (I used bread flour)
5 grm instant yeast
10 grm sugar
1 tsp of salt
30 grm butter
220-230 grm of one egg + whole milk
One egg plus 2 tsp of water for glazing the bread ( i used butter for glazing)

Method
1. Fit the mixer with a dough hook attachment, put the flour, salt,sugar and yeast in the mixing bowl, mix to combine. Slowly drizzle in the egg and milk mixture, work it on medium speed until the dough comes together and forms a nice ball of dough. Continue to mix for 10 minutes on medium speed.
2. Add in the butter and continue to mix until dough comes together again.
3. Put the dough into a lightly buttered bowl. Let the dough rise in a warm place until double in size.
4. Take the dough out of the bowl, deflate by touching it lightly. Cut the dough into 10 pieces, roll into a ball and let them rest for 10 minutes.
5. At this stage you can shape and put any kind of sweet or savory fillings you like.
6. Place the dough on the lined baking paper. Let it rest until the dough rise almost double in size.
7. Preheat the oven to 200C. Brush the bread with egg wash. Bake for 20 minutes or until the breads are golden brown.



Another way
Flatten the dough and make 5 cuts on both sides
Bring each cut into the center of the hotdog (at this stage u can place half slice of cheese)
Set the bread to proof for the 2nd time until double in size
I dont like to use egg mixture to brush my dough before baking... i prefer glazing it with butter right after i take it out of the oven)

This is Hairi's kinda cheesecake... light, super soft, fluffy and melt in ur mouth hehhe... i love  it too cos its easy to prepare and only uses 1 pack of creamcheese :op

Hb on the other hand used to hate it cos its not rich enough for his liking? but now he likes it and wud eat a few slices.. so ok heres the recipe.. its  fm alma of MR

Ingredients
(A)
250g cream cheese
50g butter
100ml fresh milk (or heavy whipping cream)
6 egg yolks
1tbsp lemon juice
1/4tsp salt
60g cake flour (or superfine flour)
20g cornflour

(B)
140g granulated sugar
1/4 tsp cream of tartar
6 egg whites



Method
1. Using double boil method... melt cream cheese, butter and milk. Let it cool
2. Add cake flour, cornflour, egg yolks, salt and lemon juice into cream cheese mixture. Mix till well blended
3. In another bowl (use stand mixer) beat egg white and cream of tartar till foamy.. add sugar bit by bit and beat till soft peak.
4. Add in cream cheese mixture into egg white mixture (as always take 1/3 egg white portion and add to cream cheese mixture first, mix well before pouring cream cheese mixture into egg white mixture)
5. Pour mixture into an 8" greased springfoam pan..
6. Bake on a preheated oven using bain-marie (waterbath) method for 1hr at 160C

Bain-marie method
Place cake pan in a roasting pan 1/2 filled with boiling water
Dont forget to wrap the outer of ur pan using aluminium foil so as to prevent water fm coming in contact with ur batter while baking

Last week i had to go to the airport 3 times... once to fetch mom and dad fm Bali then to fetch hb fm Europe and lastly was yesterday... we took mom and dad to Swenson earls for lunch... well more abt spending a little time with dad since its father's day... hb has been like zombie since the day he got back fm Europe.. knew hes gonna be super tired since hes been travelling for the past weeks! 

Well ok since i am not in the mood to bake anything... i did this rainbow pudding... u can get the recipe fm my previous entry... just go to "desert" and u will find it there...

A simple, quick snack that u can do within mins... crunchy and yummy and trust me... the moment u take this sucker out of the oven... its gone!! hahha... step by step pic is at tiffinbiru blogspot

Ingredients
4 pcs instant prata ( i used KAWAN brand)
1/3 cup brown sugar
1/2 tsp cinnamon powder

Method
Mix brown sugar and cinnamon powder
Cut ur prata into 8 equal parts
Spread sugar mixture
Roll in each portion fm the wide side
Bake at preheated oven at 190C for 20 mins
Once baked quickly let it cool on wire rack
You can serve it with icing sugar if u want

My other half is coming home later today... finally the long week is coming to an end... i am exhausted, tired, lack of sleep, frustrated etc etc etc... this whole week has been a work week for me... lots of ironing.... lots of laundry.. tonnes of housework, gardening and with Sonia only sleeps once a day (if i am lucky 2hrs... if not 45mins) i only get to do all that after 10pm when shes asleep... sigh.... honestly i think age is catching up on me and also today Sonia was fussy!!

Yesterday morning i started off very early since Sonia woke up at 7am.. oh by the way i finally fall asleep at 5am.. with only 2hrs of sleep i forced myself to finish up my ironing.. i cooked durian sticky rice for Wati and also prepare laici pudding to take to moms.. i got home at 9pm and managed to put her to bed by 10pm.. did laundry, housework, a little more ironing and finally here i am... in bed... and all this while what was dear hb doing at the airport? hes in some Real Madrid shop .. window shopping! grrrrrrrrrrrrr first of all u dont tell a frustrated woman to think positive when she complained to u abt her day cos its easier said than done... second u dont tell an exhausted woman u are window shopping! tsk tsk bad combination! and what happened next... volcano erupted!!! hahahahah

So ok yesterday there wasnt any entry cos i went out with my girlfriends... been 3 months since we last get to sit down and hv coffee together... had fun of cos!


Today i didnt plan to bake anything since i hv to go to the airport to fetch mom and dad but for some reason i ended up baking this chocolate cake... welp... whos bday is it today Rima?? hehehe... its in the fridge right now and will only taste it when i'm back later in the evening... will definitely let u guys know how it taste like!.so ok ok i cant stay long... heres the recipe... its fm Hershey's

The verdict...
It is incredibly moist… incredibly rich… incredibly flavorful… and incredibly delicious. Yeah, this cake is black magic alright because it would pretty much take some black magic to make me love a chocolate cake this much! Suffice it to say that if there were two of us at the table… and only one slice of Black Magic cake left… oh yes indeed I would push up my sleeves, slip off my earrings, kick off my shoes and wrastle you right there in public. And rest assured I would emerge victorious. This chocolate cake is that just.that.good!

Ingredients:
•2 cups sugar
•1-3/4 cups all-purpose flour
•3/4 cup HERSHEY’S Cocoa
•2 teaspoons baking soda
•1 teaspoon baking powder
•1 teaspoon salt
•2 eggs
•1 cup buttermilk or sour milk*
•1 cup strong black coffee OR 2 teaspoons powdered instant coffee plus 1 cup boiling water
•1/2 cup vegetable oil
•1 teaspoon vanilla extract

Method:
1. Heat oven to 350°F. Grease and flour two 9-inch round baking pans or one 13×9x2-inch baking pan.

2. Stir together sugar, flour, cocoa, baking soda, baking powder and salt in large bowl. Add eggs, buttermilk, coffee, oil and vanilla; beat on medium speed of mixer 2 minutes (batter will be thin). Pour batter evenly into prepared pans.

3. Bake 30 to 35 minutes for round pans, 35 to 40 minutes for rectangular pan or until wooden pick inserted in center comes out clean. Cool 10 minutes; remove from pans to wire racks. Cool completely. Frost as desired. Yields 10 to 12 servings.

Once again, I won’t bore you with an excess of words because I think the pictures speak for themselves.


* Buttermilk: I use 1 tablespoon of lemon juice plus milk to equal 1 cup.
* For icing: heat 6oz of cream to just abt boiling and pour it over 9oz of semi sweet chocolate.. letting it sit for abt 5mins and then stirring gently until combined. It thickens as it cools and i waited until it was pourable... but still thick enough so that it spread nicely with an offset spatula.
* Between the layers I spread apricot preserves thinned with a bit of hot water.

This is my favorite durian desert of all time... I swear, i cant get enough of this super delish desert!! i know for sure each time i cook it i will be the only one thats gonna finish it cos hb will only hv one serving and hairi hates durian... hmmm funny isnt it... the Caucasian in this house loves durian and the Javanese hates it hahahha

Hb is now on his way to Frankfurt... i am not gonna pretend that i am loving it cos i'm not!! hate being alone... no one to argue with hahhaha... ok ok heres the recipe...


Ingredients
454g fresh or frozen durian

For Sticky Rice
2 Cups Sticky Rice, Soaked over night, Rinse & Drain
2 Cups Coconut Milk
3 Pinch Salt
3 Tbs Sugar
a little oil

For Sauce
2 Pandan Leaves, Tied together
White Sugar as needed (i used palm sugar and white sugar)
1 Can Coconut Milk (i used KARA)
Pinch of Salt

Method
For sauce
1. Thawed Frozen Durian. If it's fresh Durian, Don't bother to thawed it.
2. Cooked in a small pan durian, coconut milk, sugar, pandan leaves and salt... for abt 10 mins or till fragrant.
3. Stir occasionally to avoid burning

For Sticky Rice
Throw sticky rice ingredients in rice cooker. Cook it just like you cook regular rice. Or you can cook with a steamer method too.(It's all up to u though, Which want u prefer).I prefer steamer method tho

How to serve it
Scoop sticky rice first and pour sauce on top. Done and ready to eat.

I am back in S'pore... my body is aching all over cos for some reason i decided to hv an oil massage at the hotel spa a day before we drive back home.. sigh regret regret...



Sonia n papa by the pool... yesterday morning was the only day where papa was able to take Sonia for a swim.. she enjoyed it!






Hb will be flying to Europe tomorrow and will be away for a week.... hes flying to Frankfurt and then to Madrid on tuesday... dont ask me why we're not tagging along cos i dont even hv the answer... i guess some trips doesnt make sense for us to tag along? maybe also cos we did germany last sept already? honestly i hv never met a guy that works like a horse... at times i wish he can take a breather and not think abt work when hes at home or even when we go out... but i guess thats not possible...hes not that sort of guy and i cant change that :o@

I am not too sure if i am in the mood to bake anything next week cos my no 1 critic will not be around... mom and dad is in Bali right now... so...if i do bake whos going to finish it up... will go and meet my gf and hang out since i hv the car for a week instead... lets just hope Sonia is not gonna be difficult cos for the past 3 days she has learn something new.... SHOUTTTT!! grrrrrr
